With the beginning of spring, I want to go somewhere for a picnic with my family, to fry a barbecue, and if there is no way to make a fire, you can cook a barbecue in the oven at home and take it with you.
Ideally, the kebab is made from lamb, but today, probably, all existing types of meat have been visited as barbecue. We, too, will depart a little from traditions and prepare kebabs from other types of meat.
Barbecue chicken kebab
For cooking, we need: 1 kg pitted chicken, 4 large onions, a couple of cloves of garlic, half a lemon, tomato paste, a spoon of non-fat sour cream (I use 15%), a little universal seasoning, salt, three tomatoes, one sweet Bulgarian pepper (preferably green or yellow, so that there is a contrast with tomatoes), black pepper.
First, cut the chicken into small pieces. Next, prepare the marinade, mind you, we have it without the use of vinegar. We will have marinade from onions, garlic and lemon. Peel the onion and garlic, cut into slices, free the lemon from the peel and also divide into slices. Then grind everything with a blender to a pulp state. Place the pieces of chicken in a pan and mix with lemon marinade, mix well. Then add spices, salt, tomato paste and low-fat sour cream, mix again. Put the barbecue in the refrigerator for a couple of hours, so that the meat is saturated with aromatic marinade.
When the meat has settled, wash the tomatoes and peppers. Cut tomatoes into slices and pepper into strips or squares. Pour the ingredients onto the skewers in the following order: tomato - sweet pepper - meat - tomato - pepper - meat - tomato - pepper. It is better to bake chicken kebab in the grill oven, so it is better cooked. You will find out about this by the aromatic smell.
Instead of skewers, you can use ordinary wooden sushi sticks, after soaking them in cold water.
Such a barbecue can be taken with you on a picnic with family or friends, it is very tasty and satisfying.
Barbecue pork skewers
For cooking, we need: 1 kg of lean pork, a couple of large onions, a whole lemon, seasoning for barbecue, hot chili pepper (one thing is enough, otherwise the barbecue will turn out spicy), salt.
Cut the meat into portions, put in a pan. Grate the onion directly on the meat, finely chop the chili and put it on the meat, season with spices, squeeze the juice from the lemon, salt, mix everything and let the skewer soak for a couple of hours. Then we chop meat on skewers and bake in the oven for half an hour. If you wish, you can bake barbecue in the oven right on the wire rack, that's okay.
Serve tomato sauce, greens to pork skewers. It turns out very tasty.
For the same kebabs I want to offer another marinade, the meat turns out to be no less tasty, juicy and tender. So, for the marinade, we need a packet of fresh kefir, one sour apple, a teaspoon of mustard, salt, you can use pepper, or you can use it without it, it still tastes good. Cut the meat, put in a saucepan. Cooking marinade. We peel the apple, grate it (do not pour the juice, it will go to the marinade), combine kefir and apples, mix, add mustard, salt and spices as desired. Pour the marinade over the meat so that it is completely immersed in kefir. Let stand for three hours and boldly bake in the oven. Lactic acid, which is contained in kefir, works a miracle - the meat becomes soft, even if it was hard. For such kebabs I am preparing a vegetable side dish: stew cabbage, tomatoes, carrots and onions.
I heard that some people use mineral water for marinade, but have not tried it yet, I plan to do it in the near future.
