Conde Rice Pudding. Structure:
- rice (preferably round-grain) - 100 gr.;
- milk 3.2% - 650 ml;
- cream 20% - 200 ml;
- sugar, vanilla;
- peaches (canned);
- rum.
Cooking:
First of all, you need to cook rice in milk, while adding a stick of vanilla. You need to cook over high heat, stirring constantly. After the milk boils, you need to reduce the heat to a minimum, close the lid and cook for about forty minutes stirring. It is important that rice in no case pester the bottom of the pan, especially at the end, when it has already thickened.
In the finished rice you need to add a little sugar (about two tablespoons), remove the vanilla stick and mix everything well. The most common rice pudding is ready to eat, but Conde's rice pudding is not quite ready.
Let's continue. Cooling down our dessert. While it cools, you need to whip the cream until the air peaks, adding rum to them (you can replace Amaretto or another liquor). If the pudding is prepared for children, then you do not need to add alcohol.
