The mashed potatoes that decorate the souffle will be prepared from raspberries (frozen or fresh). It will take 500 - 600 grams. For a greater flavor in mashed potatoes, add quite a bit of berry liquor.
Cooking sequence
Squeeze cottage cheese through cheesecloth, mix it with cottage cheese and drive eggs, sugar, vanilla, salt. Beat the cottage cheese thoroughly with a mixer or fork until the mass becomes airy.

For 4 servings of the dish, you will need 800 grams of fish, 2 eggs, cauliflower (head of cabbage weighing up to 0.5 kg), leek (can be replaced with ordinary), a little cow's butter - a slice of 50 grams, salt to taste. If you want the dish to be more spicy, add crushed garlic or pepper.
We start cooking souffle with cauliflower. My head, clean, divide into inflorescences and boil for 10-15 minutes, then turn it into mashed potatoes using a blender. We also add onion here, which will give the dish a rich aroma.
We add well- beaten protein, cabbage and spices to the minced fish, whisk them in addition, carefully introduce the yolks, do not forget to mix thoroughly.

Beat the minced meat with milk, wine, yolk and softened butter. Add spices and whipped protein.
If you want the finished dish to look more attractive, you can use Bulgarian pepper (red, yellow) finely chopped in its preparation.
Cook the souffle in a water bath or in the oven. We serve white wine. Separately, you can offer tomato or cheese sauce.
