Dumplings are traditionally classified as dishes of Eastern European cuisine. Most often, slices of dough boiled in salted water are served separately with butter or sour cream. Soup with dumplings is no less popular in Ukrainian cuisine. The recipe for this dish is presented in our article. Dumplings in different variations can be found in almost every kitchen in the world. In Italy they are called gnocchi, in the Czech Republic - dumplings, in Belarus, Poland, Latvia and other countries - dumplings. Today, soup with slices of dough is served even in restaurants, although initially this dish was positioned exclusively as a peasant. They could cheaply and satisfyingly feed the whole large family. For calories, greaves, sour cream and butter were added to the soup. Over time, the recipe was ennobled and improved. Now the dough is made from buckwheat and other types of flour, and not just from wheat, and the broth is cooked on meat, so that the soup is more rich.
The recipe for making soup with dumplings has its own secrets:
- The taste and nutritional value of a dish largely depends on the quality of the broth. It is recommended to cook it from chicken, turkey or veal.
- The dumpling for dumplings should not be too dense. To make the dumplings soft and tasty, it should stick a little to your hands.
- If you add finely chopped fresh parsley or dill to the dough, the dumplings will turn out to be more beautiful and fragrant.
- Cook the dough pieces very quickly. It is enough that they float to the surface of the water after boiling, after which the pan with the dish can be removed from the fire.
Ingredients for the dish
To prepare the meat broth you will need:
- water - 3 l;
- low-fat pork (beef, lamb) - 400 g;
- allspice peas - 3 pcs.
The following ingredients are required for the soup:
- potato - 3 pcs.;
- onion - 1 pc.;
- carrots - 1 pc.;
- garlic - 2 pcs.;
- refined oil - 3 tbsp. l .;
- salt - 1 tsp;
- black pepper - Β½ tsp.
- parsley to taste.
For dumplings, you need to prepare such products:
- egg - 2 pcs.;
- water - 50 ml;
- vegetable oil - 2 tbsp. l .;
- flour - 300 g;
- salt - Β½ tsp
Step by step recipe for dumpling soup
Even a child can cook this dish. To do this, you only need available ingredients that are easy to find in the kitchen of every housewife. Below is the entire step-by-step process of how to cook soup with dumplings.
The recipe consists of the following steps:
- Pour 3 liters of water into a suitable pan.
- Rinse the meat and put in a pan. Add sweet pepper to this. Then the broth will turn out more fragrant.
- Put the pan on the stove, bring the water to a boil, remove the foam that has formed on the surface. Boil the broth over low heat for 40-60 minutes.
- When the meat is cooked, it needs to be taken out of the pan, cooled and divided into small pieces. After that, they need to be sent back to the broth.
- Peel and chop the potatoes. Put it in the broth and cook after boiling for 15 minutes.
- Fry finely chopped onions in vegetable oil until soft.
- Carrots can be grated coarsely and added to the pan to the onion or cut the vegetable into circles.
- Send onions and carrots to the potato soup. At the same stage, you need to salt and pepper the dish.
- Knead dough for dumplings (how to do it right, described in the next subsection).
- Put slices of dough in boiling soup. Cook for 8-10 minutes. In the process of boiling, they will increase in size.
- Remove the prepared soup from the heat. Add chopped parsley and garlic squeezed through a press. Cover the pan and let it stand.
Dumplings for soup
Dumplings can be called perhaps the most important component of this dish. Traditionally they are prepared from unleavened dough. Along with this, some housewives prefer to use milk and even kefir instead of water. The process of making the dough can be seen in the photo.
A step-by-step recipe for dumplings for soup is to perform the following steps:
- Sift 300 g of flour into a bowl.
- In the center, make a deepening and break the eggs into it. Stir them vigorously with a fork.
- Add salt and mix.
- Pour in vegetable oil. With stirring, the flour mass will begin to gather in lumps.
- Pour water into the mixture with a thin stream. The dough should be moderately thick. Put it on the table, form a sausage, roll it in flour and cut into small cubes. When cooking, they are sure to increase in size.
If the dough turns out to be liquid, it can be taken from a bowl with a spoon (Β½ tsp each), immediately dipping it in boiling soup. In this case, the dumplings will be more porous and softer.
Dough for dumplings on kefir
Some housewives prefer to cook dumplings based on a sour-milk drink. In their opinion, the dough on kefir is softer, and the dumplings themselves are tastier. It is worth a try and this cooking option. Perhaps such dumplings will actually be tastier.
The recipe for dumplings for soup (pictured) consists of the following steps:
- Kefir (Β½ cup) is slightly warmed up so that it becomes warm.
- Add a pinch of soda to it. If you leave it on the table for several minutes, the kefir mass will start to foam.
- Break the egg into a separate bowl and beat it with a fork.
- Add the egg and flour (200-250 g) to the kefir mass. The dough should be moderately dense. On a surface dusted with flour, it must be rolled into a sausage. Cut the dough into small cubes and dip in boiling soup.
Yushka Poltava
The name of the next dish in Ukrainian sounds like "yushka with dumplings." It enjoys no less popularity than borsch. In Poltava, they even erected a monument to famous dummies. But yushka is the same soup that is made from potatoes, cereals, legumes, noodles, vegetables or pieces of dough. It is served at the table with the indispensable dressing - sour cream.
The cooking process consists of just a few steps:
- Bring cooked meat broth (2 L) to a boil on the stove.
- Knead the dumpling for dumplings: combine flour (1 tbsp.) With egg, salt and add water (Β½ tbsp.)
- Roll out the dough 2 cm thick, and then cut it into squares 1-1.5 cm wide.
- In a boiling meat broth add diced potatoes (5 pcs.) And circles of carrots. Cook for 5 minutes.
- Add prepared pieces of dough to yushka.
- Fry the onion in fat (100 g) and send to the pan. Salt to taste and continue cooking the yushka for 20 minutes.
Ready soup with dumplings (pictured) is served with green onions and thinly sliced ββlard. If desired, the dish in a plate is seasoned with sour cream.
Soup with mushrooms and dumplings
The next dish has not only a pleasant taste, but also a delicious aroma. The following soup with dumplings can be prepared according to the recipe with both dried mushrooms and mushrooms. As a basis, you can take meat broth or ordinary water.
Soup is prepared as follows:
- The broth is brought to a boil over medium heat.
- Potatoes (2 pcs.) Are cut into cubes, mushrooms (100 g) - into plates, and carrots (1 pc.) - into strips. You can not add onions to the soup.
- Sliced ββpotatoes are laid in boiling broth.
- Olive oil (30 ml) is poured into the pan. As soon as it warms up, mushrooms with carrots are laid out in it and fry for 5 minutes. Ready roasting goes to the potato broth.
- Knead batter for flour dumplings (Β½ tbsp.) And eggs.
- Dumplings are sent to the soup 5 minutes before the end of cooking. To do this, a small spoonful of dough is collected in a teaspoon dipped in cold water and dipped in broth. As soon as the dough falls behind the spoon, it needs to be lowered into water again, and then a new portion of the dough should be filled.
- After 2 minutes, when all the dumplings pop up, you need to salt the soup, sprinkle with herbs and remove from heat.
Meatball and Dumpling Soup
This unusual first course will especially appeal to children. A step-by-step recipe for soup with dumplings (you can see the finished dish in the photo) consists of the following actions:
- Boil 2.5 l of water in a saucepan.
- Peeled potatoes (3 pcs.) Cut into slices. Send it to boiling water and cook in salted water for 25 minutes.
- Minced meat (200 g) salt, pepper and mix with half a chopped onion. Wet meatballs with wet hands and put them separately from each other on a plate.
- Dice the other half of the onion and fry with carrots in vegetable oil.
- Ready to fry vegetables to send to the potato pan. Add spices to the soup.
- Send all the meatballs one at a time to boiling water. Cook them from the moment of boiling the soup for 10 minutes.
- Pour water (5 tbsp. L.) Into a separate bowl, add salt and egg. Shake everything with a fork. Add 5-6 tablespoons of flour. The consistency dough should be like sour cream. To make dumplings, you need to pick it from a bowl with a teaspoon and dip it in boiling soup. After 3 minutes, the dish will be ready.
Dumplings with Dumplings
This soup will appeal to all supporters of vegetarian food. It can be served at the church fast, when all products of animal origin should be excluded from the diet. The recipe for soup with dumplings consists of three steps:
- In a pan with water (2 l), dip potatoes chopped into cubes (5 pcs.) Add carrots and onions to the whole or chopped into slices. Cook potatoes for 20 minutes. Salt water in advance to taste.
- From a glass of flour, 100 ml of water and a pinch of salt, knead the elastic dough. Form a tourniquet from it and cut it into pieces.
- Dip the dumplings in the pan to the finished vegetables. Add sunflower oil (3 tbsp. L.) And green onions. Cook soup until dumplings float to the surface.
