Yeast dough is considered an excellent basis for baking soft rolls, pies, pizza, muffins and other goodies. It is kneaded by special technology and must be kept warm. In today's publication, we will look at some simple recipes for kefir yeast dough.
Practical tips
Such dough can be prepared with pressed and granulated yeast. They are dissolved in kefir heated in a water bath, and then supplemented with the rest of the ingredients. Most often they add sugar, eggs, salt, vegetable or butter. Another mandatory component of this test is flour. Before pouring into a common container, it is advisable to sift it through a sieve to give greater friability.
Immediately after all the ingredients are in the same bowl, they are thoroughly mixed with dry hands until a homogeneous air mass appears. The finished dough must be covered with a clean linen cloth and cleaned in heat so that it has time to come up.
It is also worth remembering that kefir needs to be heated only in a water bath. If you send the container with the fermented milk product to an open fire, it will curl up and become unsuitable for further use.
With vegetable oil
The dough made using the technology described below combines well with sweet and savory fillings. Therefore, it will not go unnoticed by lovers of fried homemade pies or pizza. To knead it you will need:
- 500 ml of kefir of any fat content.
- 40 g of pressed yeast.
- 85 ml of refined oil.
- 4 tbsp. l Sahara.
- Selected Egg.
- Flour (as required).
- Salt.
To knead the yeast dough, kefir is heated in a water bath. As soon as it becomes warm enough, they send to it all the available sugar and a couple of tablespoons of flour. The crumbled yeast is poured there and thoroughly stirred. Fifteen minutes later, the approaching dough is supplemented with salt, vegetable oil and a raw egg. The resulting mass is thoroughly mixed with flour, covered with a clean towel and left to warm. After some time, the increased dough is slightly crushed and allowed to rise again.
With milk
For those who often make homemade cakes, we advise you to pay attention to another version of the kefir yeast test. In the oven, very tasty ruddy pies with various fillings are obtained from it. To knead it you will need:
- 300 ml of kefir.
- 100 ml pasteurized milk.
- 100 g butter.
- 33 g of pressed yeast.
- 2 tbsp. l cane fine crystalline sugar.
- Β½ tsp salt.
- Selected Chicken Egg.
- Flour (as required).
The crumbled yeast and sugar is poured with warm milk and briefly removed to the side. After about ten minutes, non-hot melted butter, non-cold kefir, salt and a raw egg are added to them. Everything is thoroughly whipped with a whisk, and then supplemented with sifted flour and thoroughly kneaded until a lush porous mass is obtained. The finished dough is covered with a linen napkin and insisted in heat until the volume doubles.
With water
Using the methodology described below, a very tender kefir yeast dough is obtained, which will be an ideal base for air buns. To prepare it, you will need:
- 100 ml of settled water.
- 250 ml of kefir of any fat content.
- 50 ml of vegetable oil.
- 30 g of pressed yeast.
- 3 tbsp. l Sahara.
- Selected Egg.
- Salt and flour.
Warm water and a third of the available sugar are added to a bowl with crushed yeast. All this is insisted for about five minutes, and then combined with heated kefir, vegetable oil, salt, an egg and the remnants of sweet sand. All is thoroughly processed with a whisk, and then kneaded with pre-sifted flour. The resulting mass is covered with a linen napkin and left warm until the volume increases.
No eggs
The recipe considered below allows you to knead yeast dough tender on yogurt, as soft as fluff, without unnecessary trouble. To play it you need:
- 375 ml of kefir of any fat content.
- 11 g of granulated yeast.
- 875 g of flour.
- 30 g of sugar.
- 75 ml of olive oil.
- Salt.
Kefir is heated in a water bath and combined with granular yeast and sugar. Shake everything well and leave it warm for a while. In just six minutes, salt, olive oil and oxygenated flour are added to the foaming solution. All intensively knead by hand, and then cover with a clean towel and wait for the increase in volume.
With butter
This yeast dough on kefir will certainly be useful to those who love muffin. To knead it you will need:
- 1 kg 250 g flour.
- 45 g of sugar.
- 10 g of granular yeast.
- 2 selected eggs.
- A glass of kefir of any fat content.
- Half a pack of butter.
- Salt and vanillin.
Melted butter and raw eggs are added to the preheated kefir. Sugar, salt, vanillin and granular yeast are poured into the resulting solution. All this is intensively processed with a whisk, and then kneaded with oxygen-saturated flour. The finished dough is covered with a clean towel and left to warm. Twenty minutes later, they crush it and wait until it re-increases in volume.
With olive oil
For those who canβt spend a lot of time making homemade pies, one more variant of kefir yeast test will probably come in handy. A step-by-step recipe for its preparation will be presented a little lower, but for now, find out what is included in its composition. To knead it you will need:
- 750 g of flour.
- 250 ml of kefir of any fat content.
- 11 g of granulated yeast.
- 15 g of sugar.
- 125 g of olive oil.
- Salt.
Kefir yeast dough, like fluff: a step by step recipe
Step No. 1. The fermented milk product is heated in a water bath.
Step number 2. In warm kefir, olive oil, sugar and a pinch of salt are bred.
Step No. 3. All this is supplemented with sifted flour, pre-connected with granulated yeast, and thoroughly knead.
Step No. 4. The finished dough is laid out in a clean container, covered with cling film and put into heat. As soon as it increases in volume, pies or rolls are made from it.
With margarine
This is a truly versatile kefir yeast dough. Delicious buns, rolls, savory pies and pizza are made from it. To prepare it, you will need:
- 200 ml of kefir of any fat content.
- 50 ml of settled boiled water.
- 100 g of milk margarine.
- Selected Chicken Egg.
- 8 g of granular yeast.
- 2 tsp Sahara.
- Β½ tsp salt.
- 3 cups flour.
- A pinch of soda.
Granulated yeast, half of the available sugar and a little flour are diluted in warm water. After some time, the foaming solution is poured into a bowl in which there is already warm kefir and soda. There they add an egg, a non-hot molten margarine, the remaining sweet sand and oxygenated flour. The resulting dough is covered with a towel and left to warm. As soon as it grows in size, pies are made from it or other pastries are made.
With sour cream
Those who like rich homemade cakes are advised to replenish their collection with another recipe. To prepare a doughless dough, you will need:
- 250 ml of kefir.
- 100 g sour cream.
- 100 ml of water.
- 10 g of granular yeast.
- 125 g of sugar.
- 5 cups of flour.
- Selected Egg.
- Salt.
Granular yeast is poured into a bowl of heated water. The resulting solution is supplemented with salt, sugar, sour cream, egg and cold kefir. Shake everything well, and then mix it with pre-sifted flour. The finished dough is transferred to a bowl, covered with food-grade polyethylene and put into heat. After about an hour, it can be used for its intended purpose.
