A few words about the benefits of blueberries

But these are trifles, compared with the amount of iron, carotene and vitamins contained in blueberries. Vision weakens, hemoglobin drops, diabetes comes up - blueberries are one of the first helpers in the fight against ailments and troubles. Yes, and many other diseases, such as urolithiasis, gout,
gastrointestinal diseases and others, are overcome faster with this berry. Therefore, it is desirable to consume it all year round: fresh, dried, ice cream, as mashed potatoes, jams and preserves, fruit drinks, jelly and even as a filling in butter baked goods.

And, indeed, what could be more wonderful with tea or coffee than a sweet, airy cake with a golden brown and juicy berry filling! Such pastries will remind you of summer, will delight you with a pleasant sweetness with a slight sourness, leave behind you such an aftertaste in your tongue that you will remember it with pleasure for a long time to come.

Classic blueberry pie is made very easily and from a minimum of products that can be found in the refrigerator of any housewife. For a 6-serving pie, weβll have enough 250 g of premium wheat flour (you can have the first, but not lower!), Butter or baking margarine - 125 g, sugar - depending on personal preferences: someone may limit it to 2 -3 tablespoons, and sweet tooth can pour more. Blueberry pie will not suffer from this. Next, a bag of vanillin or two - vanilla sugar. Two because the taste and smell of sugar is less saturated than pure vanillin. One and a half tablespoons of starch, preferably potato; a pinch of salt and two eggs. This is all that is needed for the test.
- Sift flour, mix with salt, add butter, chopped into small cubes or grated on a coarse grater. Keep the oil in the refrigerator until it is cold. To make the dough for blueberry pie, the flour should be mixed, more precisely, grind with butter. Beat in eggs, add cold water and knead the dough not too steep. It is wrapped in cellophane and sent to the refrigerator for about an hour.
- Divide the dough from the refrigerator into 2 unequal parts. The bigger one (about 2/3 of the total) should be rolled out in the shape and size of the container in which the blueberry pie will be baked. The form should be with sides. It is thoroughly greased with oil, and vegetable. Sprinkle breadcrumbs (semolina, if no crackers, or just flour) on the bottom and walls of the mold. Put rolled dough into it, stick around the sides.
- Now it's up to the filling. If the berry is frozen, it is not thawed. Blueberries are mixed with starch, sugar (to taste), the remains of crackers. Spread on the dough.
- On top of the cake, the blank is covered with the remaining rolled dough, the edges are carefully covered so that the juice from the berries does not leak.
- Place in a preheated oven and bake for about half an hour at a temperature of 220 degrees. From time to time, check readiness with a wooden knitting needle or toothpick.
- The finished cake is sprinkled with powdered sugar or smeared with whipped protein and sugar.

The real thing is a blueberry
curd pie. For this, blueberries should be mixed with cottage cheese until smooth. Also put on the dough (you can cook the same as in the previous recipe), grease the protein with whipped sugar and bake on top. Instead of protein, you can make a grid of test strips. In any case, it will turn out very, very tasty!
