Secrets and tricks of making desserts with mascarpone
First of all, it is worth remembering that for the splendor of the finished biscuit, it should be left immediately after baking to cool in the oven, turning it off.
In order for the biscuit dough for the cake to be very lush, you should follow a certain sequence of introducing the ingredients: first, the yolk is introduced into the proteins, and then the flour.
In the cream of mascarpone for the cake, the recipes of some desserts indicate the addition of fruits and berries to taste - this rule can be followed even if the cooking technology does not provide for this, since the berry flavor is ideally combined with the delicate texture of the cream.
Classic biscuit cake with mascarpone
To make a good dessert according to this recipe, you need to take one and a half glasses of fat cream and put them in the refrigerator.
Now you need to prepare the dough for the future biscuit - it is classic and is used in many recipes. To do this, take 3 chicken eggs, 3/4 cup powdered sugar and the same amount of flour. Separately, you need to beat the proteins, turning them into a lush foam, after which this foam neatly combines with the whipped remaining ingredients. Now the resulting homogeneous mass must be laid out in a baking dish, on parchment and baked in the oven at a temperature of 180-190 degrees to the state of readiness (about 20 minutes).
In the meantime, itβs time to prepare a gentle creamy cream. For this, mascarpone cheese and cream are taken - 300 grams each, powdered sugar 3/4 cup. All these ingredients must be well beaten until a homogeneous mass is formed.
After cooling the biscuit, it is spread with cream on top - a great cake with mascarpone cheese is ready.
Coffee and liquor tiramisu with mascarpone
This is a classic Italian dessert, which for many years remains a favorite of Russian sweet tooth and not only.
To prepare it, you need to mix a glass of natural black coffee with a glass of liquor (you can use other strong alcohol, such as cognac or rum). In one cold dish, you need to beat two squirrels to a thick foam, and in the other a couple of yolks with 4 tablespoons of powdered sugar.
Now, in a separate bowl, put 400 grams of mascarpone cheese and slowly add the yolks and proteins separately. In this composition, the ingredients must be mixed well until a homogeneous mass is obtained and put in the refrigerator.
Now you need to soak the Savoyardi cookies in coffee with liquor - it will take 100 grams. After it, it is necessary to lay it tightly on the bottom of the mold, after which it should be poured with cream on top, using exactly half of it. After this, the procedure must be repeated, now laying on top of the cream another 100 grams of cookies and pouring the remaining cream on it. At this, the biscuit cake with mascarpone is ready - it remains only to sprinkle 1/3 of the chocolate bar grated on it and send for a couple of hours in the refrigerator.
Chocolate sponge cake with mascarpone and cherry berries
To prepare such a dessert, beat 3 eggs with a mixer, add 150 grams of powdered sugar and the same amount of sifted flour, as well as half a glass of cocoa with a thin stream. After thoroughly whipping all the ingredients, the dough is obtained from them - it must be poured into a pre-prepared baking dish and sent to the oven, heated to 190 degrees until it reaches full readiness.
In the meantime, you can prepare a cream that will decorate the product. To do this, take 300 grams of cream cheese, the same amount of fat cream and 150 grams of powdered sugar. Cheese with powder should be thoroughly beaten with a mixer at medium speed, then slowly add cream - you get a gentle cream.
Ready and cooled sponge cake should be densely covered with cooked cream and sprinkled with grated chocolate, which must be prepared in advance. Cherry berries are laid out on top. This is how the mascarpone cake is made - the recipe is very simple.
Strawberry cake
In order to prepare such a cake, it is necessary to make a biscuit, following the technology described above. From the finished cake it is necessary to cut off the top in order to get a beautiful and uniform cake, the thickness of which will not exceed 2.5 cm.
Now in a separate bowl you need to make a cream. To prepare it, you need to soak 1.5 tablespoons of gelatin, following the instructions on its packaging. Separately, beat 4 yolks and 4 tablespoons of powdered sugar until a homogeneous mass is formed. Then the ingredients must be combined with the cooled gelatin and mixed well. 0.5 kg of cream cheese is added here and everything is whipped with a mixer at a slow speed until the mass is uniform.
Now, 4 proteins should be whipped separately, in which a pinch of salt should also be added (so they will increase in volume faster and the cream will be better), after which the resulting mass must be combined with cheese.
Now you need to take a pastry mold with high edges and lay a biscuit cake on its bottom. Freshly prepared cream is poured onto it and all this is decorated with chopped strawberries. Separately, jelly is prepared, after which they need to pour the cake on top. Now is the time to send a cake of ready-made biscuit cakes with mascarpone and strawberries to the refrigerator, until the jelly is completely frozen on it. After 4 hours, it will be possible to get the finished confectionery product, which will please not only the eye, but also the taste buds of even the most inveterate sweet tooth.
Mascarpone Cake with Whipped Cream
If you cook it according to this recipe, then the result is a very beautiful cake decorated with sweets and fruits, with pink cakes inside.
First you need to cook cakes. The dough is kneaded in exactly the same way and from the same amount of ingredients as in the previous cases, only at the stage of whipping the proteins in a lush foam, you need to add a pinch of powder food coloring, which will give a pink color. After cooling, the large cake should be cut into several thinner ones (in width).
Next, separately prepare the cream for the cake. To do this, beat 400 grams of mascarpone cheese with the same amount of powdered sugar and add 1.5 cups of cream to them - all these ingredients must be turned using a mixer into lush foam.
After the biscuit has cooled, each of its cakes should be greased with cream and put on top fruits (any, to taste). So, having greased and laid all the cakes, on top of the product we spread all the remaining cream and fruits. On top of the hat of such a cake you can decorate with three Oreo cookies and, if desired, with chocolate icing - they will look very impressive here.

These ingredients should be well beaten with a mixer, working at medium speed. Now you need to add a can of condensed milk here (lovers of boiled condensed milk can use it) and beat everything again.
Mascarpone cream with honey
There is another original version of the cream that can be used by decorating a biscuit cake with mascarpone (the recipe is presented above). Thanks to this cream, a standard and simple product will acquire a new unusual taste.
To cook it, whisk separately 0.5 kg of cheese and a couple of tablespoons of honey to a thick, uniform consistency. Then, in a separate bowl with a mixer (at medium speed), 1.5 cups of the most fat cream should be turned into a thick mass. After that, slowly and carefully connect them with a honey mascarpone. After mixing all the ingredients well, the result is a delicious creamy honey cream.
