Sea bass is a medium-sized fish of red-golden color, usually reaching a little more than a kilogram. This species of fish is found in the waters of the North Atlantic. Cook the sea bass and add a special flavor using Dutch sauce on egg yolks. Believe me, it gets just incredibly tasty and beautiful (which is important for a festive dish, for example).
Ingredients (based on 3 servings):
- three sea bass;
- one carrot;
- one onion;
- bay leaf, salt and peppercorns;
- three egg yolks;
- 150 grams of butter;
- two tablespoons of boiled cold water;
- a tablespoon of lemon juice.
Cooking
You will have to start by gutting the abdomen and washing the fish. Clean it from the scales, cut off the head, tail and fins. Pour water into a rather large pan and bring it to a boil. Add onions, bay leaves, carrots and peppers. After about 5 minutes (just the spices have time to give their aroma), put the fish in the pan.
When the water boils a second time, reduce the heat so that there is not too much boiling. Salt everything. After about half an hour, the sea bass will be completely ready.
Sauce making
Pour three egg yolks into small enameled dishes, add the butter, sliced. Just choose the most natural, not stuffed with herbal supplements. There you need to drain the water. Put everything on a small fire and constantly stir the sauce.
When it acquires a uniform appearance (similar to liquid cream) and you see the first bubbles, that is, it does not have time to boil, immediately remove from heat.
Add lemon juice to the sauce and mix well. Salt a little and mix again.
Put the fish in a dish and pour over the cooked sauce.
Some tips for making sea bass
Hollandaise sauce comes out fragrant, delicious and uniform. It harmonizes wonderfully with boiled sea bass, but also goes well with seafood (mussels, squid and shrimp), meat and vegetables.
As a side dish, mashed potatoes, boiled or fried vegetables or rice are ideal for boiled sea bass with sauce.
How to cook sea bass with smoked brisket
Ingredients:
- two perches;
- 300 grams of smoked brisket;
- three pieces of potatoes;
- pitted olives;
- four tablespoons of olive oil;
- lemon;
- breadcrumbs, garlic, parsley, pepper and salt.
Cooking sea bass
Squeeze the juice from the lemon, mix it with salt, olive oil, pepper and chopped garlic. Pour the pre-gutted and washed carcasses of perch from all sides with the resulting mixture. Cover with foil and put in the refrigerator for a couple of hours for pickling.
Wash well and, without peeling off the peels, boil the potatoes. But so that the vegetable is half-prepared. After a few hours, when your fish is fully marinated, take it out of the marinade and place it in a suitable baking dish. Between the carcasses it is necessary to put slices of smoked brisket.
Cut the boiled potatoes into small pieces, without peeling them . Pour half of the marinade in which the perch was prepared.
Finely chop the parsley and mix it with potatoes. Put the vegetable around the perch, cut the olives into slices and place them on top of the dish.
Pour all the remaining marinade, sprinkle with breadcrumbs and put in the oven to bake at 180 degrees for 20 minutes.
