Potato pancakes recipe: this is how they are cooked in Belarus

Many consider potatoes to be the second bread. This vegetable is especially relevant in Belarus, because it is not only eaten there, but also grown, moreover, in considerable quantities. In Russia, potatoes have a slightly different attitude. At least he does not cause such fanaticism. As a real Belarusian, I’ll say that we really have potatoes - the whole head. If he is not on the table, consider eating a hearty meal will be difficult. Yes, and for pasta, buckwheat and rice you will not last long. Again, I can’t vouch to speak for the whole world, but in Belarus they consider it that way.

I don’t want to delve into when the first potato came to our table. Only the fact that it was delivered to Europe during the discovery of America by Christopher Columbus is known for certain. It is not clear why Belarusians, and not residents of some other country, so “passionately” fell in love with potatoes. They grow it everywhere, but in Belarus, I repeat, the attitude towards it is completely different.

One of the most common dishes that are prepared from potatoes are potato pancakes. They are fried in a hot pan, and potato, previously grated on a fine grater, serves as a “test” for them. I offer you a universal recipe for potato pancakes. Of course, you have to sweat, but only a little.

How to cook potato pancakes

An interesting fact is that potatoes grown by Belarusians contain much more starch than Russian. That is why, kneading the dough on potato pancakes, you do not need to add the same flour or starch. You look yourself, if you notice that the dough turns out to be liquid, then you definitely need to add a bit of flour or starch. So, here is my recipe for potato pancakes. So to speak, native Belarusian.

· Peel potatoes. Its quantity completely depends on how much you are going to bake potato pancakes. If you will be doing this for the first time, then start with a small amount, so to speak, for a test.

· Peeled potatoes should be grated. I will say right away that it is very boring and long. If you don’t have enough time, proceed as follows: chop the potatoes in a blender.

· Now add salt to taste. Mix everything well.

· Pay attention to the consistency of the mass. They should not be liquid, since it will not work to make famous pancakes out of it. What to do, you already know.

· That's all, the bulk of the work has been done. It remains only to start baking our pancakes.

· To do this, heat the pan in which the vegetable oil has already been poured, and with the help of a spoon, put our potato shingles on it. Depending on the size of the pan, 3-4 pancakes can be baked at a time.

By the way, the same potato pancakes in Ukraine are called potato pancakes, and in the Czech Republic something similar is called bramboraki. But the Jews make latkes from the grated potatoes, however, they still add a few pieces of eggs to the shingles.
