Zucchini marinated like mushrooms resembles salted mushrooms to taste . They have an original taste. And most importantly - they are very easy to prepare. Such zucchini is one of the best side dishes suitable for a meat dish, and as an appetizer for vodka, they are also excellent. So let's reveal the secret of their preparation.
Ingredients (option number 1)
To make such zucchini (pickled, like mushrooms), you will need:
- three kilograms of squash;
- two carrots;
- 1/2 cup garlic (minced);
- two tbsp. tablespoons of salt;
- a glass of sugar;
- one and a half glasses of vegetable oil;
- a glass of 9% vinegar;
- one tbsp. a spoon of ground pepper (black);
- on a bunch of dill and parsley.
This list of products can be called the main. There are recipes in which this list is slightly different. But more on that later.
Cooking process
Itβs very easy to pickle zucchini. The recipe, which will be discussed now, will not cause difficulties even for beginners.
We take zucchini, peel them and cut them into cubes. Pour into a large pot. Getting to the carrots. We clean it, but cut it into thin circles. Add to the pan to the zucchini. Parsley and dill finely chopped. We send to the vegetables in a pan. We do the same with chopped garlic. Dress vegetables with sugar, pepper, salt, vegetable oil, vinegar. All mix well. Letβs stand for three hours.
After that, we lay out the salad in sterile jars, cover with lids. We collect in a pan of water up to the neck of the jar, set the salad to be sterilized for 30 minutes. Periodically check the condition of the dish. If rising bubbles appeared in the jars, then it can be argued that the dish is ready.
When the marrows, pickled like mushrooms, are ready, we take out the cans from the pan. Turn them upside down, wrap them up, hold in this form until the salad is completely cool.
Option number 2
It was previously mentioned that the list of products is different. Zucchini marinated for the winter can be prepared a little differently. Itβs worth even experimenting and choosing the set of components that you will like. We offer a recipe option that does not differ significantly from the previous one.
We will need:
- zucchini - one and a half kilograms;
- salt - one tbsp. the spoon;
- black pepper (ground) - 1/2 tbsp. the spoon;
- sugar - three tbsp. spoons;
- vegetable oil - 1/2 cup;
- dill - a bunch;
- vinegar 9% - 1/2 cup;
- garlic - 4-5 cloves.
We clean the zucchini, cut into fairly large slices, which should resemble pieces of chopped mushrooms. If there is a loose core in zucchini, it should be cut out. If this is not done, then we will not succeed in the effect of bruises. But this is the main goal of this workpiece.
We cut dill. We clean and chop the garlic with a knife. Mix everything, leave at room temperature for three hours for marinating.
Now we lay out the prepared salad in sterile jars, cover with sterile lids, put in a large pot with warm water. The water level should not be higher than the shoulders of cans. When the water boils, sterilize the zucchini for 5-7 minutes.
We take out the cans, roll up, turn it upside down. You do not need to wrap them. In this position, leave to cool completely. And only then we put it to be stored for the winter in a cool place.
Option number 3
Since the technology for preparing such zucchini according to different recipes is not particularly different, we reflect on the ingredients included in the salad. The list of products may be as follows:
- 2 kg of squash;
- 7 cloves of garlic;
- 1/2 cup vegetable oil;
- 1/2 cup vinegar;
- one and a half Art. tablespoons of salt;
- ground black pepper (to taste);
- three (without slide) Art. tablespoons of sugar;
- to taste parsley and dill (or one thing).
Using these ingredients in such quantities, you will end up with five half-liter jars. Ponder a little over them, and you will have delicious zucchini marinated like mushrooms.
