  • 900 g halibut;
  • 600 g of new potatoes;
  • 2 medium carrots;
  • 2 large onions;
  • 5-6 cloves of garlic;
  • 80 g of butter;
  • coarse salt;
  • freshly ground black pepper;
  • a large pinch of dry basil;
  • 5 sprigs of fresh parsley;
  • mold release oil.

Lubricate the large refractory form with vegetable oil. Turn on the oven to warm up to a temperature of 185 Β° C. You can also cook halibut in sour cream in the oven, but then we recommend that you prepare the side dish separately.

Cut onions into thick half rings, thoroughly mash it with your hands so that it releases juice, and place in the center of the pan.

Prepare the fish: rinse and dry if necessary, season generously with a mixture of ground peppers and salt, sprinkle with dry basil. Put halibut on an onion pillow and spread thin slices of butter on top.

Peel vegetables and peels, crush the garlic with a knife (so it’s better to give its aroma and taste when baked) and arrange in a random order in shape.

Cut the young potatoes and carrots, put in a bowl and season with salt and pepper. Add a little sunflower oil and mix the vegetables so that they are covered with an oil film.

Arrange the vegetables around the fish, flatten and place the mold in a hot oven. Then halibut in the oven is baked evenly.

Moreover, the fish cooked according to it is worthy of a festive table. On a large baking sheet you can bake several carcasses at once, which greatly simplifies the cooking process.

To prepare you will need:

  • small carcass of halibut;
  • 65 ml of sunflower oil;
  • 2-3 lemons;
  • 50 ml of soy sauce;
  • 1 tbsp. a spoon of honey;
  • 1 tbsp. a spoonful of chili sauce;
  • 50 g butter;
  • coarse salt - to taste;
  • a little black pepper;
  • 5 branches of dill and parsley.

Prepare the fish for baking: peel it without damaging the skin, remove the insides and cut from the head of the gill. For an aesthetic look, we recommend not to remove the fish head.

Rinse the fish and dry it thoroughly with kitchen paper towels. Lubricate it with softened butter. Season the carcass well with salt and a mixture of ground peppers and briefly set aside.

In a separate bowl, mix soy sauce with a small amount of vegetable oil, add chili and liquid honey. Stir and generously coat the fish, leaving a little mixture for lubrication and glazing during baking.

Coarsely chop fresh greens, and lay it in the abdomen of the fish. Cut one lemon with thick enough rings, and the second, on the contrary, as thin as possible, with almost transparent rings.

Insert thick lemon slices into the abdomen of the fish. Put a part of thin rings on a baking sheet, place a fish on them and place the remaining slices on top.

Grease the halibut with the remaining sauce and place in the preheated oven for at least 25 minutes. After 12-15 minutes, the form must be removed. Once again, walk with a brush with sauce on the surface of halibut, return the form to the oven and bake until tender.

Having cooked the whole halibut in the oven, serve it to the table in this form, without dividing it into portions. To do this, take a serving dish, decorate it with fresh herbs.
