  • filtered water - 100 ml;
  • coarse salt - 2 tbsp. l .;
  • garlic - 4-5 cloves;
  • hot peppers - 0.5 pcs.;
  • fresh cilantro - a bunch;
  • young mint leaves - 4-5 pcs.;
  • apple cider vinegar - 25 ml.

How to make the sauce:

  1. Rinse all thorns in clean water. Remove a bone from each berry. Put the pulp in a pan - preferably with a thick bottom and walls. In such utensils, the sauce does not burn when stewed.
  2. Add water and salt to the pan. Put on a slow fire. Cook and stir with a spatula for 7-10 minutes.
  3. Next, introduce peeled garlic and hot pepper into the pan. Keep in mind: the more these ingredients, the hotter and hotter the sauce will be. Stew for another 5-7 minutes.
  4. During this time, rinse all the fresh herbs (cilantro and mint can be replaced with dill and parsley if desired), chop it finely with a knife. Transfer to a pot with boiling blackthorn.
  5. Remove the pan from the stove for a while, grind the sauce with a submerged blender until the consistency of the paste.
  6. Put the mass in again. Add vinegar and mix.
  7. After two minutes, turn off the stove. And put the sauce in sterilized jars and cover with sterilized lids. You got blackthorn sauce for the winter.

Additional ingredients

Remotely, such a sauce is similar to Georgian tkemali or tklapi. Only it is made not of plums or cherry plum, but of the fruits of blackthorn. If desired, you can prepare several jars of such a blank for the winter. And make each run special. Just introduce new flavors:

  • coriander;
  • Imereti saffron or more affordable turmeric;
  • dill - seeds or greens;
  • peeled and roasted walnuts;
  • tomato paste.

Saffron or turmeric before adding to the sauce, be sure to soak in a small amount of hot water, preferably boiling water. For one pinch of spice, 3-4 tablespoons of liquid is quite enough.

Be sure to peel walnuts or any other nuts from the dark skin, it makes any dish astringent-bitter. It is easy to do this - fry the nuts in a dry pan or in a saucepan (if there are a lot of nuts). How to make marmalade:

  1. Rinse the fruit. Cut the peel from apples, remove the seeds from the turn. Cut the pulp into pieces and transfer to a pan.

  3. Process the walnuts as described above in the “Additional Ingredients” section and chop into slices. It can be crushed with a coffee grinder or blender. Insert the crumbs into the fruit pan. Shuffle.
  4. Cook the mass until thickened and reduced in volume. After this, remove from heat and cool slightly.
  5. Cover a wide baking sheet with low sides with baking paper and grease it with butter. Spread the sweet fruit and nut mass on paper evenly. Level with a spatula like a spatula.
  6. Place the baking sheet in a slightly warm off oven. It will cool, and leave the pastille there for another day. Then sprinkle with powdered sugar and cut into small pieces.
