How to make a piano cake?

Cake "Piano" has a delicate peach flavor. It is made of several layers: chocolate and light biscuits. In the article we will tell you a step-by-step recipe for making this amazing cake. We wish you a pleasant and easy cooking!

Ingredients

Cake "Piano" is considered difficult to prepare, as it will require a lot of ingredients. You need to stock up on a large number of products. For chocolate biscuit:

  • eggs - 5 pcs.;
  • sweet apricot jam - 1 glass;
  • sugar;
  • butter - 3 tbsp. l .;
  • cocoa powder;
  • flour - half a cup.

For light cake:

  • sugar - 150 g;
  • 5 eggs - pcs .;
  • flour - half a glass;
  • warm water - 50 ml.

Filling (cream):

  • sour cream with a fat content of 25% - 450 g;
  • sugar - 4 tbsp. l .;
  • vanilla sugar;
  • sifted flour - 3 tbsp. l

Peach filling:

  • juicy sweet peaches;
  • sugar;
  • agar agar;
  • cream - 3 tbsp. l

Piano Cake Recipe

As mentioned earlier, it consists of several levels. This is a chocolate and light biscuit, as well as layers of peaches and cream. Cake "Piano" should be juicy and incredibly tasty. We start cooking.

Making chocolate biscuit:

  • First you need to separate the proteins from the yolks. Then gradually add sugar, whisking with a whisk or a blender. You should have a gentle and airy meringue.
  • We work separately with the yolks. Apricot jam, cocoa powder, butter and flour should be added to them. Mix the whole mass well, and then gradually add in the meringue.
  • Place the whole dough on a baking sheet, pre-greased with butter, and bake at 180 degrees for about 30 minutes.
  • After baking, gently cut the biscuit into two even parts.

The recipe for the second biscuit:

  • first you need to add sugar to the eggs and mix everything;
  • pour water into a mass and add flour;
  • beat well;
  • bake the dough at 180 degrees for 15 minutes.

Stuffing and cream:

  • It is necessary to mix sour cream thoroughly with sugar, flour and vanilla. It turns out the most delicate cream.
  • Then proceed to the preparation of the peach filling. First, peaches should be peeled and pitted.
  • Then you need to cut the fruits into small pieces.
  • Then pour water into the container, add agar-agar, sugar, peaches and cook over low heat until the fruits soften.
  • Then you need to put in the filling three tablespoons of cream and mix everything.

You can also add nuts to the cake.

We form a cake and decorate

After everything is ready, we proceed to the formation of the Piano cake. First you need to put a chocolate biscuit. Then top with a thin layer of cream spread on it and put pieces of peach filling. The second layer will be a light biscuit, which should also be cut into two parts. We spread cream and peaches on it. The third layer will again be chocolate cake. We do all the same actions with a dark biscuit. Then we put the last row - this is light cake.

You can decorate the cake as you like. For example, grease the top and sides with the remaining cream, and nicely lay fresh peaches on top and shape the edges with whipped cream.
