Baked products

Pies from the dough with cottage cheese are sweet and salty, baked in the oven and fried, puff and yeast ... Everyone can choose a recipe to taste. Take, for example, baked cakes with cottage cheese. As a rule, they are prepared from yeast dough. And to bake them, you will need:

  • flour - 400-500 g;
  • granulated sugar - 3 tbsp. l with a slide;
  • dry fast-acting yeast - 7 g;
  • milk - 200 g;
  • eggs - 3 pcs.;
  • cottage cheese - 400 g;
  • sunflower oil - 2 tbsp. l .;
  • a pinch of vanillin and 0.5 tsp. salt.

Do not forget that yeast dough does not like drafts! When working with him in the kitchen, the window must be closed.

First you need to sift the flour into a large bowl, then pour the yeast into it and mix. Heat the milk to a slightly warm state. It should never be hot! Drive one egg into the flour with yeast, add milk, pour 1 tbsp. l sugar and salt, mix everything thoroughly. Then add oil. At this stage, it is already becoming difficult to knead the dough with a spoon (by the way, it is recommended to use a wooden spoon) - it is time to move on to manual kneading. Lightly dust the surface of the table with flour, then lay the resulting dough on it.

Knead it well for about 15 minutes - it should stop sticking to your hands. Then put it back into the bowl, cover with a clean cotton towel and leave it in a warm place for one hour. Then take out the markedly risen dough, thoroughly knead again and let go for an hour again.

In the meantime, you can cook the filling. Divide the two remaining eggs into squirrels and yolks. Pour the cottage cheese into a bowl, mash with a fork and mix with yolks, 2 tbsp. l granulated sugar and vanilla until smooth. If you like dried fruits, you can pour a handful of well-washed raisins. When the dough has arrived, you can start making cakes with cottage cheese.

Divide it into equal small pieces. Each of them is a future pie. Lumps need to be rolled into circles, for each put a spoonful of cottage cheese filling. Then carefully pinch the edges and shape the cake. Cover the baking sheet with baking parchment and place flour products on it. Cover with a towel again, and then let it go for half an hour. Then preheat the oven to 200 degrees.

Bake!

Beat whites lightly with a fork and brush them with a brush (silicone) . Put the pan in the oven and bake the pies until cooked. If a toothpick or match after being stuck in the dough remains dry, and the product itself has acquired an appetizing golden color - then you can take it out! However, keep in mind that when baking yeast dough, it is better not to open the oven for the first half hour - it may not bake.

Ready cakes with cottage cheese are best kept in a saucepan with the lid closed so that they remain soft. However, believe me, such pastries will not be stored for a long time anyway - family members will immediately grab it!

Puff pastry

Now we will tell you how to make puff pastry with cottage cheese. For them you will need:

  • finished puff pastry - 600 g;
  • cottage cheese - 300 g;
  • eggs - 3 pcs.;
  • dill, chives, salt and pepper.

So, while the puff pastry is thawing, prepare the filling. It is better to take cottage cheese dry (nonfat), because with whole cakes it may not turn out crispy. Put it in the bowl and remember with a fork.

Finely chop the dill and chives. In principle, you can take any greens to your taste - parsley, cilantro, etc. Salt, pepper and mix. Beat one egg, stir until smooth. The filling should be thick. If the egg is large, and the mixture turned out to be a little liquid - add more cottage cheese. Now start working with the test. Roll it lightly in length and cut into equal squares. How many squares come out, so many pies come out.

Visually divide each quadrangle into two identical parts and make three short parallel cuts on the right. On the left side you need to lay out the filling. Then gently cover the hill with the “notched” side of the dough and carefully pinch the edges so that the cakes do not open when baking. Cuts are needed so that steam can escape through these holes.

And now - in the oven!

Cover the pan with baking paper, lightly sprinkle with flour. Preheat the oven to 180 degrees, carefully put the pies on a sheet. Beat the remaining two eggs with a fork and carefully brush each item with a brush.

Bake puff pastries with cottage cheese for about half an hour, until crisp. They turn out beautiful, with three holes through which the filling appetizes through. Tasty both hot and cold. Such unsweetened pies can even be served with soup instead of bread.

Another recipe

And, of course, one cannot fail to mention fried cakes with cottage cheese. The recipe is simple. The filling can be prepared according to any of the proposed methods - at least sweet, even salty. And for the test you need to take 2-2.5 cups of flour, 300 g of kefir, 1 tbsp. oil (sunflower), 1 tsp. sugar, half teaspoon soda and salt.

Pour kefir into a bowl, quench soda in it and pour sugar and salt. Then pour in the vegetable oil, mix everything thoroughly and pour the sifted flour into a bowl. It remains only on both sides to fry them in sunflower oil until golden color.

Good appetite!
