Pork roast with potatoes - a symbol of the Russian feast

What particular dishes are commonly used in Russian cuisine to be called the term "roast"? In Russia, this is the name of any animal meat dishes cooked in an oven. The most popular among housewives is roast pork with potatoes, cooked in a pot. Cooking this dish is quick and easy. In addition, individual portions are also a beautiful table setting. Cooking such a roast is not difficult, especially if there is a special ceramic tableware.

Roasted pork with potatoes in pots

The proportions in the preparation of this dish are not so important, so we will not give the distribution of products. Focus on the size of the dishes and the number of eaters. There should be twice as much meat in volume as vegetables.

Tasty and aromatic roast pork with potatoes is prepared as follows. Cut the meat into small pieces and put in pots. On top we put onions, chopped into small cubes, potato slices and mushrooms, chopped slices. Add a little mayonnaise or sour cream, and then send to the oven. Sprinkle the finished dish with dill or parsley.
In this dish, pork can be replaced with beef liver.


Pork roll with potato garnish

Cooking the roast in the form of a roll is a little more difficult. You’ll have to tinker a bit here. But roast pork with nut filling is the main contender for the title of royal treat.

To prepare the dish we need 1.5 kg of pork fillet, 1 onion, butter, minced pork - 300 g, pounded pine nuts - 75 g, orange - 1 piece, a handful of raisins, breadcrumbs - 50 g. A few tubers will be needed for the side dish potatoes.

We clean the onion, chop finely and fry in oil. Mix with minced meat, breadcrumbs, orange juice, nuts and raisins. Add pepper and salt to taste.
Cut the fillets in layers and beat off well. We spread the meat, put the stuffing from minced meat on it. We turn the roll and fasten with toothpicks.
We put the roll in a heated oven and while the pork is cooked, peel the potatoes.
After 40 minutes, spread the potatoes around the roll, pour it with the juice released during frying, and send it back to the oven.
Serve roast pork with potatoes in a separate dish, complemented by a salad of fresh vegetables.

Rustic pork roast with vegetables

As we said above, there are many ways to cook roast. Today we offer you one more recipe, according to which you can easily prepare a tasty and satisfying main course for Sunday lunch or home celebration.
In order to cook such roast pork with vegetables, we need a piece of meat fillet with layers of fat, white cabbage - 500 g, Bulgarian pepper - 250 g, onion - 2 pieces, a few cloves of garlic, pepper, salt. Thinly chop the cabbage and onions, cut the pods of pepper into slices and place them in a mold. Add pepper, salt and a little chopped garlic. On this vegetable pillow we lay a piece of pork, previously stuffed with pieces of garlic and grated with salt and black pepper. We put the dish in the preheated oven and bake. The readiness of the meat is easy to check by piercing a piece with a fork.

Pork roast with mushrooms can be prepared in a similar way. Just replace one of the components of this recipe or add them to the dish additionally.


You can cook roast from lamb or pork, but beef is not suitable for this purpose, this meat is rather dry. The components of the roast can be not only mushrooms, onions or potatoes, but also any other vegetables. Carrots, cauliflower or broccoli, kohlrabi are great for this purpose. Finely chop or rub vegetables. On the contrary, let the pieces be large. Various berries or fruits will give an additional aroma: prunes, cranberries, currants, dried apricots, lime.
