The filling for such stuffed cabbage is very easy to make. For 10 minutes, soak the rice, then rinse it under running water and cook until half cooked. Then the rice is thrown on a sieve so that the excess water is gone.
Meanwhile, the onion is finely chopped and fried in a pan. Carrots are rubbed on a coarse grater and added to the onion. All this is carefully stewed. 50 ml of tomato juice or diluted tomato paste are sent here. As soon as the mixture reaches a boil, it is removed from the heat and cooled.
Carrots and rice are thoroughly mixed and seasoned with salt and pepper. This is the filling for future cabbage rolls. A small amount of the filling is placed on the cabbage leaf and wrapped in the form of pancakes.
Stuffed cabbage is stacked very densely in several layers at once. They must be poured with tomato juice and cold water. In this form, the dish should be stewed for about 1 hour. Served stuffed meatless cabbage without garnish, but always with rye bread.
Stuffed cabbage lean with mushrooms
Instead of stuffing, stuffed cabbage can also be stuffed with wonderful mouth-watering cereals. It turns out to be very satisfying and insanely delicious. By the way, many guests will find this dish unusual. To prepare it, you will need a head of cabbage (fairly medium size), a glass of millet, 200 g of mushrooms (champignons are also suitable), 1 carrot, onion, oil (sunflower), salt and all kinds of seasonings.
First, cabbage is prepared. A whole head of cabbage is dipped in boiling water for 5 minutes. Lightly boiled leaves will be easier to break off from the stump.
Now you need to cook the filling. Mushrooms are cut into slices, and onions into small pieces. All this is fried in oil. Millet is washed and cooked in several glasses of cold water. Next, you need to combine millet and mushroom roasting. All this is necessarily seasoned with spices.
The filling is laid out in cabbage leaves and wrapped in the form of small envelopes. Such cabbage rolls are placed in a pan and completely filled with water. On fire, the dish is stewed for about an hour.
Meanwhile, you can prepare the fry. Chop the onions, and carrots rub on a grater. All this is passivated, and then laid on top of the finished meatless cabbage rolls.
Pickled cabbage rolls with vegetables
Great cold appetizers are pickled cabbage rolls. The ingredients are needed the most common. Among them are 2 carrots, a head of onions, celery (a root is necessary), a head of cabbage, garlic, salt, chili and black pepper. First, the filling is prepared for future cabbage rolls. All these vegetables are peeled and cut into small cubes. Green peas and chopped chicken eggs (3 pieces) are poured into this vegetable mixture. Such minced meat is necessarily seasoned with salt, pepper and vegetable oil.
