For filling:

- 3 dried porcini mushrooms;

- 150 grams of ham;

- 2 tbsp. l flour;

- 100 grams of onion feathers;

- 2 tbsp. l olive oil;

- 1 chicken yolk;

- 2 tbsp. l mustard;

- chopped greens and parsley;

- salt, spices, black pepper.

Soak the dried mushrooms for the filling in water. Stew finely chopped onions in melted or olive oil. Fry flour in a small amount of oil for no more than a minute. Cut the ham into long pieces.

Soaked mushrooms, fried onions and parsley pass through a meat grinder. Pour some water in which the mushrooms were soaked, one egg yolk, fried flour, mustard, salt and pepper as needed. Mix everything thoroughly until smooth.

Cut the beef tenderloin lengthwise, unfold, grate with pepper and salt and discard. Put the filling on top, as well as the sliced ​​ham and roll up the straw. Bandage the finished roll with a strong thread.
