But cloudberries are a very good diuretic, diaphoretic and anti-inflammatory. The peoples of the north with colds drink tea with soaked cloudberries. In this case, it is no less effective than raspberry or lime blossom.
Urination is the traditional way to keep fruits fresh
There are several ways to make soaked cloudberries. All are equally simple and easy to implement. The most important thing in urinating is water, which is filled with berries. It needs to be soft and very clean. Boiled is not an ideal option. Better to find a good bottled one. The most suitable is raw spring. Before soaking the berries must be cleaned of litter and rinse with cold boiled water.
Cloudberry soaked. Recipe 1. Two kilograms of berries need three liters of water, two hundred grams of honey and 30 grams of salt.
Prepare the fill - slightly warm the water and dissolve honey and salt in it. Stack berries in an enamel bucket, clay or wooden tub and pour the prepared solution. Put oppression on top - a wooden circle or a flat plate (not metal). Press the circle with a stone so that the yoke goes under water and all the berries are immersed in a solution.

In winter, soaked cloudberries with sugar can become the basis for gourmet sauce for boiled meat - pork, beef and game.
Half a glass of berries is poured into one and a half glasses of water and brought to a boil. Fire is reduced to a minimum. Salt, pepper and dry herbs are added to taste. The sauce should simmer on low heat for 20 minutes. Ten minutes before graduation, pour two tablespoons of red grape wine. Cool the sauce at room temperature and rub through a sieve. Boil again.
Duck or rabbit stewed with cloudberries
The specific smell of duck and rabbit meat is very gently leveled by the taste and aroma of soaked cloudberries. It is no coincidence that the northerners are so fond of combining this berry with dry deer meat. For them, cloudberries are a kind of analogue to lemon. The carcass is rubbed with salt and pepper, the internal cavity begins with soaked cloudberries. Everything is wrapped in Teflon-coated paper, and then foil and placed for an hour in a hot oven.
Gourmet Jelly
You can make jelly with soaked cloudberries, which is good for pouring lean meat, beef tongue and chicken fillet.
From white meat of broiler chicken aspic with cloudberries is made as follows. Boil one liter of chicken broth from one broiler. In the process of cooking, season with pepper and salt. Remove the meat, and put cloudberries in the broth and cook for several minutes, strain and wipe. In a strained broth, put 10 grams of gelatin and leave to swell. Chop the meat into slices and arrange in tins. Tear green parsley and dill with your hands into small pieces and put on meat. Bring the broth with gelatin to a boil and pour into molds in two or three doses.

Pour a glass of soaked cloudberries with two glasses of cold water, bring to a boil and cook for five minutes. Do not let cool, wipe through the sieve. Dilute a tablespoon of potato or corn starch with half a glass of cold water. Without stopping stirring, pour into hot mashed cloudberries. And over a small fire, also stirring all the time, bring to a boil. To taste, add sugar and turn off. In order not to form a film, cool the jelly, covering it with a lid.
Creamy yellow orange dessert
One glass of cloudberry soaked in sugar should be boiled in half a glass of water and rubbed through a sieve. Grind two egg yolks with one hundred grams of granulated sugar, pour half a glass of water and mashed berries. Stir and bring to a boil over low heat. As soon as a little seething begins, remove the dessert from the heat. Cool, garnish with fresh berries, sprinkle with powdered sugar, coconut and grated chocolate.
