As the name of the dish implies, its basis is stewed chicken. The recipe according to the classic African tradition involves the preparation of a whole carcass, and then its subsequent grinding. However, this may seem time-consuming, so it is still advisable to use its ground parts: wings, legs, and especially the hips. In addition, you can choose the option most suitable for you - use one meat in a dish, separating skin and bones from it, or cook everything in its entirety. The second option is more desirable, as this will add an extra flavor to the dish.

Sweet potatoes are required in the African version, but if you don’t like it or cannot find it on sale, use regular potatoes or turnips.

The meat should be quite sharp, so seasoning is of great importance. At the end of cooking, add 1 teaspoon of cayenne pepper. Ideally, it is better to use chili peppers, however you should correctly calculate its amount. Use chicken thighs, chicken legs or wings for this recipe. They have more flavor and will be more juicy than breast.

Ingredients:

- 1–1.5 kilograms of chicken thighs, chicken legs and / or wings;

- 1 onion, white or yellow;

- 3 tablespoons of vegetable oil;

- a piece of ginger, previously peeled and chopped;

- 6-8 garlic cloves, chopped finely;

- 1-1.5 kg of sweet, peeled and pre-sliced ​​potatoes;

- 500 grams of chopped canned tomatoes;

- 500 ml of chicken broth;

- 1 cup peanut butter ;

- 1 cup roasted peanuts;

- 1 tablespoon ground coriander;

- 1 teaspoon cayenne pepper (or to taste);

- black pepper and salt;

- 1/4 or 1/2 cup crushed cilantro.

Heat the oil in a large saucepan over medium heat. Salt the chicken pieces and sauté to a slightly brown crust. Set them aside.

Sauté the onion for 3-4 minutes, stirring constantly and removing any burnt parts from the bottom of the pan. Put the garlic and ginger and fry for 1-2 minutes, then add the sweet potatoes and mix thoroughly to combine all the ingredients.

Add chicken, chicken stock, chopped tomatoes, peanut butter, peanuts, cayenne pepper and coriander to the mixture and mix all the foods very well. Bring the dish to a boil, then add salt to taste. Cover the pot and simmer for one and a half hours over low heat (check the degree of readiness in an hour), or until the chicken meat is easy to leave the bones and the sweet potatoes become soft.

Remove the chicken parts from the pan and put them in a bowl for cooling - until they have cooled enough so that they can be touched. Remove and discard the skin, and then remove the bones and grind the meat (optional). Put everything back in the pan. Adjust the amount of seasoning and salt, and add hot pepper to taste. Sprinkle with cilantro and serve with boiled rice.
