Pancakes are a very popular dish, especially in Russia. Cooks have come up with a huge number of varieties of this dish. A very good substitute for meat is liver, especially if it is cooked correctly. Well, pancakes with liver - you will lick your fingers! What is a liver? These are the internal organs of the animal: kidneys, liver, lungs, heart. Everything is very useful and in good hands very tasty. We offer you a recipe for a delicious dish.

Topping recipe:
- veal heart - 1 piece;
- light calf - 1 piece;
- onions - 3 pieces;
- Bay leaf;
- black pepper peas - 5 pieces;
- salt - 2 teaspoons;
- vegetable oil for frying onions.
First, choose a liver, which we will use for the filling. Ideally, this is the calfβs heart and calfβs lungs, as they have less fat and cholesterol (compared to pork liver). We cut the offal into pieces, we get rid of all the excess - tubes and films. Be sure to set the cook in different pans, as the lungs are boiled for a maximum of half an hour, and the heart - for an entire hour. After the water boils, drain it and pour a new one. This is done so that all the βdirtβ is washed off from the liver, so we get rid of the unpleasant odor and taste. In the second water we add spices and simmer the set time, until cooked. Since the liver will be preparing for at least an hour, we have time to bake pancakes.
Pancake Dough Recipe
It is necessary to cook:
- milk - 1.5 liters;
- eggs - 2 pieces;
- salt - a pinch;
- sugar - 1 teaspoon;
- flour - 1 cup (200 grams);
- soda - on the tip of a knife.
Pour half a liter of milk into a large bowl, add eggs and beat. Then add flour, sugar, salt and soda, beat again (beat preferably with a mixer to avoid lumps). Pour in the remaining milk and beat for the third time. Important: to make thin pancakes, not pancakes, the dough should turn out to be liquid, a little thicker than milk. This is also necessary so that the pancakes come out elastic.
While the dough is infused, prepare the onions, without which pancakes with liver will not be so tasty and juicy. Onions need to be cut into cubes and fry until golden brown in vegetable oil. Do not forget to stir more often so that everything is fried evenly and does not burn, otherwise an unpleasant bitter aftertaste will appear. While the onion is fried, drain the water from the liver and set to cool.
The onion is ready, the dough is insisted - we proceed to frying the pancakes. Pour the dough onto a hot, greased frying pan and quickly tilt the bowl until the dough covers the bottom. Fry the pancake on both sides and put it on a flat plate. In order for the pancakes to be juicy and melt in the mouth, it is recommended to lubricate each with melted butter (culinary brush). Thus, overcook all the dough.
As soon as the pancakes are ready, we proceed to the preparation of minced meat: we cut the cooled liver into pieces and pass through a meat grinder. We mix fried onions into the liver - the filling is ready.
The final stage
It remains a little - to form pancakes with liver in beautiful envelopes. To do this, spread the minced meat with a spoon on the lower half of the pancake, turn the bottom and top, and then roll it up. Press with your palm so that the filling is evenly distributed inside, and fry in a pan from two sides to a crispy golden crust. Voila, pancakes with liver served!
