A sandwich as a meal is simple: a piece of bread, a relatively uniform paste spread on top. If desired, you can add something else, cut into small slices: vegetables, meat products, cheese, fish, greens. It is very convenient when there is no time for lengthy preparations. Sandwiches also perfectly diversify any table, even a festive one, if you design them accordingly. But what about vegetarians? Making sandwiches for them may seem an impossible task, if you do not take into account a couple of elementary options from greens and mayonnaise.
What can be used for cooking?
In fact, there are many recipes for vegetarian sandwiches for the holiday table, which will be a great decoration of the meal and a good snack in front of the main course. Before cooking, it is important to know what vegetarians can eat and what not:
- No! Meat and products from it (sausage, bacon, paste, etc.), fish of any kind. Most vegetarians do not eat seafood, and only a few eat eggs.
- Yes! Vegetables, fruits of any kind, as well as sauces, pastas and pastes from them. Nuts of any kind, seeds and seeds, seedlings of cereals - everything is used in the process of creating a sandwich mass.
- Vegetarians do not eat hard cheese, cottage cheese and cream-based sauces, it depends on their position: some do not use any animal products to show that they do not torture animals for their own benefit. Less principled vegetarians calmly drink milk, eat cheese and cottage cheese, knowing that the animal did not suffer from this.
To decorate the finished products, you can use small twigs of arugula, parsley, grain seedlings, olives and olives, cut into halves, lingonberries or cranberries, as well as any small vegetables cut into slices.
Simple "spreads" on bread
The most common vegetarian sandwich pastas are guacamole and hummus. In addition to using them daily as a “spreading” on bread, you can prepare other pastas from available products, creating beautiful and tasty canapes as a festive snack. For instance:
- Grind baked peppers (2 pcs.) In a puree with a blender, add cream cheese (150 grams). Grate a small fresh cucumber and squeeze the juice, send the resulting mass to the cheese along with 1 clove of garlic. Mix thoroughly until smooth, salt if necessary. This mass needs to stand in the refrigerator for an hour or two, so that the ingredients "make friends", and only then use it to prepare vegetarian sandwiches.
- Cut the brown bread into small slices, using a silicone brush, grease them with vegetable oil and dry in an oven or grill. Peel and grind one avocado in mashed potatoes, adding lemon juice (2 tbsp.) And a little salt. With the help of a curly nozzle of a pastry bag, plant the resulting mass on bread rolls in the form of a beautiful curl, garnish with fresh cucumber and cranberries. You can also use green onion feathers.

- Spread the prepared bread, as in the recipe above, with a paste made from cottage cheese, a small amount of cream and finely chopped dill. On top of the paste, put circles of radish, tomato or a slice of boiled egg. Garnish with small sprigs of arugula.
Appetizer with Cheese Paste and Cucumbers
In Italy, such canapes are called “crostini”, and one of the prerequisites is crisp bread, not softened by “spreading”. This will indicate that these vegetarian sandwiches are made immediately before serving. For cooking, you need to take:
- 1 French baguette;
- 120 grams of good quality processed cheese;
- 1 clove of garlic;
- 1 fresh small cucumber (the thin diameter and the absence of formed seeds are important);
- a pinch of salt, black pepper and ground paprika;
- some finely chopped dill.
Cooking
These vegetarian sandwiches for the festive table are prepared from fried slices of baguette immediately before serving: lightly grease a frying pan with oil (do not water!), Put slices of baguette and fry until golden brown.
In parallel with this, prepare a paste of cheese, spices and garlic, carefully wiping everything until a uniform mass. Put 1 tbsp each piece of fried baguette. l cheese paste, and on top - a few circles of cucumber. If a piece of bread is large, you can spread them a little overlap. Sprinkle with dill and paprika.
With daikon and red onion
Such vegetarian sandwiches look colorful on the festive table, and at the same time they are such a good snack that even meat-eaters eat them with pleasure. To prepare you will need:
- Half a french loaf.
- 200 grams of daikon, fresh cucumber and potatoes, cooked "in uniform". All vegetables are taken in small sizes so that it is not necessary to cut them into small cubes, only in circles.
- Half a red onion (sweet variety).
- According to 2 tbsp. l sour cream and mayonnaise.
- A generous pinch of salt and black pepper.
Cooking
Baguette for vegetarian sandwiches is better to dry in the oven or in a heated frying pan without oil, but it is not necessary to fry until crust. If the usual taste of the onion is confusing, it can be pickled for 8-10 minutes (previously chopped with thin rings) in three tablespoons of vinegar, mixed with the same amount of water, a pinch of coriander, the same portion of black pepper and cumin.
Cut the boiled and peeled potatoes into slices, cucumbers and daikon too, but thinner. Mix sour cream with mayonnaise, salt and pepper. Spread slices of baguette with this sauce, put a slice of potato on top, onion on it, then daikon and cucumber on top. You can decorate with spring onions or arugula.
Hot sandwiches for the whole family
Instead of a bite to eat or a hearty breakfast, you can use vegetarian hot sandwiches with baked pepper. To do this, bake whole Bulgarian peppers in the oven, then peel them, remove the seeds and divide into 4 parts. Next, grate slices of bread with a clove of garlic, put a slice of cooked pepper and sprinkle with grated cheese. Put in the microwave for 30-50 seconds, and then serve immediately. Very simple, tasty and quite satisfying. If there is no microwave, then you can bake in the oven at a temperature of 200 degrees to the cheese crust.
Another option for a delicious snack can be prepared from eggplant: cut into circles and fry in a pan until golden brown, put on slices of bread (3-4 cups each), lay on top sliced tomatoes and sprinkle with grated cheese. Bake in the oven at a temperature of 220 degrees to a crust and serve hot. Those who like spicy options can add chopped garlic by placing it between eggplant and tomatoes.
