With the advent of summer and the first warm rains, mushrooms appear. Therefore, in the midst of summer, I so want to cook something delicious, it's time to cook mushroom dishes.
In early summer, after heavy rains, row-trees grow well (they are light brown meadow mushrooms, they grow in a row, that's why they were called that, maybe they do not grow everywhere). In general, mushroom dishes, of course, are not for everybody, since not everyone tolerates and not everyone likes mushrooms. But from them very tasty culinary masterpieces are obtained. Here is one of them - potato zrazy with mushrooms.
Such dishes of mushrooms go at the table simply with a bang. For cooking, we need such products: 1 kg of fresh potatoes (the early varieties are already ripening at that time), about 500 grams of mushrooms (I use row mushrooms, other mushrooms can be), 30 grams of butter, 1 large onion, 1 egg, garlic, herbs , salt, flour (for breading) and vegetable oil for frying.
This mushroom dish is cooked quickly. It is very tasty and elegant, so it can be cooked even for the holidays.
Finely chop the onions and mushrooms and fry them in vegetable oil, orient ourselves on the onion - it should become golden. Do not forget to salt and pepper. Closer to preparedness, put chopped garlic to the mushrooms. We clean and boil potatoes. Then we make mashed potatoes from it with the addition of salt, pepper and butter. When the mashed potatoes have cooled, add the beaten egg and flour, mix everything and form cakes. We spread a spoonful of mushroom filling in the center of each of them , fold the potato cake in half and form zrazy. They look like big burgers with filling. Next, roll the zrazy on both sides in flour and fry in vegetable oil until a crispy crust. Sprinkle the prepared zrazy with herbs and pour plenty of sour cream, serve to the table. Out of this number of products I got 10 pieces. Here is such an interesting dish made of mushrooms.
The same option can be prepared a little differently. Fry the mushrooms as well, and boil the potatoes in slices. Then spread the mushrooms on top of the hot potatoes, sprinkle with grated cheese, herbs and serve. It turns out a very satisfying dish, you can feed a large family. Very good to eat them with sour cream.
Cutlets with mushrooms and cheese are equally tasty . In order to cook them you will need 500 grams of any minced meat, 300 grams of mushrooms (champignons can be bought at any store in any season), 2 large onions, a couple of slices of a white bun, 1 egg, 100 grams of any hard cheese (I like it more Mozzarella "), garlic 2 cloves, sour cream, salt and vegetable oil. Such dishes of minced meat and mushrooms can be served with or without a side dish.
Finely chop onions and mushrooms, salt and fry until cooked in vegetable oil. Add crushed garlic a couple of minutes before cooking. Mushrooms are ready. Now prepare the minced meat for cutlets. Soak a slice of bun in milk, squeeze and mix with minced meat. Next, add the beaten egg, salt and mix. We form cutlets and bake in the oven. 5 minutes before cooking, take out a baking sheet, spread a spoonful of mushrooms on each, sprinkle with grated cheese on top and send it back to the oven. We are waiting for the cheese to melt a little. Serve hot cutlets with sour cream and generously sprinkle with herbs. As a side dish you can serve mashed potatoes, rice or stewed vegetables.
By the way, from mushrooms you can cook salads, various soups, pastries. In fact, there are many interesting recipes, just not always enough time to try each of them. My friend is fond of pancakes with mushroom filling and even cooks sushi with mushrooms. Of course, I have not tried it myself, but it sounds tempting, I plan to cook it in the near future.
