- 5 grams of salt;
- 30 grams of sugar;
- 100 milliliters of sunflower oil;
- 400 milliliters of running water;
- 250 milliliters of milk;
- 700 grams of flour.
This recipe is very easy to prepare. If you follow all the steps correctly, then the dough is very tender.
To make dough, mix warm water with yeast, sugar and flour. After you see the bubbles, pour the dough into a deep bowl. Add milk and water at room temperature to this plate, and do not forget to add salt. Mix thoroughly and add the flour. It turns out soft, but moderately batter. Knead such a dough for 15 minutes. After kneading the dough, add sunflower oil to it and mix again. Place in a warm, dark place so that the dough rises.
After 15 minutes have passed, the dough will double in size, or even more. Such a dough will stretch well, but will stick to your fingers. To avoid this, you can add flour, but it is better not to do this, as the dough will turn out less lush and soft. With a little experience, you will be able to make three equal parts of round pies.
A popular recipe for Ossetian meat pies
To prepare the dish we need the ingredients:
- 1 kilogram of lamb;
- 250 grams of onions;
- 20 grams of garlic;
- 15 grams of chili pepper;
- 50 grams of cilantro;
- 30 grams of butter.
1. Peel the onions and garlic. Chop or garlic under the press.
Finely chop the lamb. You can also twist meat with onions in a meat grinder with large holes. The meat should have a small amount of fat (1/5 of the mass of all meat) so that Ossetian pies do not turn out to be dry.

Lay the foil in the entire baking sheet and put the future pie on it, without forgetting to make a small hole in the center so that the steam comes out better. The hole should be done only in the upper layer of the test. Bake for about 25 minutes.
5. While the first pie is already baking, we must manage to make the second one exactly the same. After the first pie has been prepared, the second is put in its place. Lubricate the cake just removed from the oven with butter. And cover with something to keep it warm. We repeat the exact same manipulations with the second and third pie. Put the pies on top of each other and you can serve them to the table.

Ossetian meat and potato pie recipe
To prepare the dish we need the ingredients:
- 1 kilogram of minced lamb (can be pork or beef);
- 80 grams of water;
- 650 grams of potatoes;
- 100 grams of cheese.
1. Cut onions into rings or cubes and fry until golden brown in sunflower oil. Add the fried onions, a little pepper and salt to the minced meat, and also add warm water. Stir the mass well.
2. For potato filling, you need to make mashed potatoes. Add butter, salt and pepper. Grate the cheese on a fine grater and put it in a plate with potatoes. Stir well also.
3. Divide the dough into 3 parts. Flatten the dough and put the minced meat in the middle. Assemble the outer parts to the middle. Roll the filling gently throughout the dough.
4. Do the exact same thing with the potato. Do not forget to make a hole in the center of the pie.
