Of course, you can’t do without the main component - milk. But otherwise, you are completely free to work. Creamy ice cream at home

The first recipe is traditional, with cream. We need 200 ml of cream, and they must be fat and fresh. In addition to them, prepare 3 eggs, 200 ml of milk, 150 g of regular sugar and one bag of vanilla. Pour the milk into a saucepan, put on the fire and, stirring constantly, wait until it boils. Then remove from heat and cool to 40 Β° C. The yolks must be mixed with regular and vanilla sugar and beat with a mixer until the sugar grains completely disappear. Now it's the turn of milk. It must be poured in a thin stream, without stopping the whipping of the yolks. Place the bowl with the resulting mass in a water bath and hold there until the mass reaches the cream state. Put the cream in the refrigerator and cream. Beat them and gradually, one spoonful, enter them in a chilled cream. Then transfer the ice cream to a deep container and cover it with a lid and hide it for 3-4 hours in the freezer (the temperature should not exceed -18 Β° C). After waiting for the set time, remove the ice cream and beat thoroughly with a mixer to break the pieces of ice formed, then put it back. This procedure can be repeated twice or thrice. After that, ice cream can be served to the table, adding to it something to your taste (syrup, fruit, jam, candied fruit, marmalade, etc.). Here's how to make ice cream at home with cream.

Ice cream without cream

The second recipe is not quite the traditional preparation of ice cream at home. Unusual here is the lack of cream. One example of such ice cream is sorbet. Here you can do without eggs and milk. All that is needed is water, sugar and berries. A kilogram of any berries or fruits is poured with boiling water and infused for 2-3 minutes. After that, the resulting mass is rubbed through a sieve and sugar is added to it (to taste). Ice cream is laid out in shapes and refrigerated. After a couple of hours, it can be served to the table.

But sorbet is more like fruit ice than usual ice cream. But how to make ice cream at home without cream and at the same time make it look like real? There are such recipes. Prepare 1 liter of milk, 4-5 eggs, a glass of sugar, 5 tablespoons of starch and a bag of vanillin. Put milk on the fire and wait until it boils. Then cool. Pound the egg yolks with sugar to a state of foam, add starch and vanilla. Now this mixture can be poured into milk and put what happened on fire. Bringing the resulting mass to a boil, remove, cool and can pour into molds. After the ice cream has stood in the refrigerator for several hours, they can be enjoyed.
