Chakhokhbili is one of the dishes of Georgian national cuisine. With the advent of this dish, many legends are associated. The hero of these legends was faced with the task of preparing something from pheasant meat, but he did not have fat or oil for frying it. The hero found a way out of the situation, and thus a dish called chakhokhbili appeared.

Since there are no free pheasants on sale, they began to replace it with chicken, which is available to almost everyone. There are many recipes for this dish. You can’t list all the recipes, so we will focus on two of them.

How to cook chicken chakhokhbili?

Chakhokhbili Chicken Recipe No. 1:

To prepare this dish we need: chicken carcass, 3-4 large tomatoes, 2 bell peppers, 2-3 onions, 1 head of garlic, 50 gr. vegetable oil, 50 gr. butter, a bunch of cilantro, a bunch of parsley, and spices (red pepper, adjika, suneli hops).

First of all, cut the chicken carcass into small pieces. Then cut the onion heads in half rings. Melt the butter, while preferably in a cast-iron frying pan, pour the chopped onion into it and fry. It should be borne in mind that butter can burn and it is better to pour onions in the pan early. After the onion acquires a golden hue, pour it into a plate.

We make incisions on the tomatoes, sprinkle them with boiling water, then remove the skin and cut into cubes.

After that, pour the sunflower oil in the pan and when it warms up, put the chopped tomatoes there, close the lid and simmer.

Finely chop the garlic and when the tomatoes boil, put a third of the garlic. There we put half the finely chopped cilantro and parsley.

And after that we simmer for about ten minutes. In another cast-iron skillet or cauldron, if available, pour the chopped pieces of chicken. No oil is needed. Enough fat in chicken is enough. We begin to intensively mix the pieces in a pan. Frying them, we spread the stewed vegetables there, after which we simmer everything for about 10 minutes.

Add the fried onions and then simmer for another twenty minutes. Put the remaining parsley, garlic and cilantro. Stir, add spices and cover. We cut bell pepper in half rings and also put in a skillet. Cover with a lid and keep on low heat for about 10 minutes. Chakhokhbili is ready.

Chakhokhbili Chicken and Potato Recipe No. 2

  Ingredients: chicken carcass, 4-6 heads of onions, 4 potatoes, about 800 grams of tomato, 25 grams of butter, a bunch of cilantro and a bunch of parsley, a tablespoon of mint, Β½ tablespoon of tarragon, one and a half teaspoons of red pepper, 1 teaspoon of coriander, 1 teaspoon of Imereti saffron.

Preparation: we cut the chicken carcass into pieces, after which we heat the pan, put pieces of chicken in it and cover with a lid. Stew for 5 minutes over low heat.

The juice formed from the chicken is poured into another bowl. Fry the chicken in a pan for 10 minutes. At the same time, you do not need to cover with a lid and gradually add juice so that the chicken does not burn.

Finely chop the onion, add it to the pan, put the butter and fry for 5 minutes.

Cut the potatoes into several parts and boil. We cut the tomatoes with a knife and pour them over with boiling water, after which we remove the skin from them. Cut the pulp of tomatoes into small cubes and add to the pan with chicken, then add the boiled potatoes. During the stew, pour the broth left over from the potatoes. After a while, add herbs and spices. We wait a few minutes and the dish is ready for the table. As you may have noted, this recipe for Chakhokhbili from chicken is simple, and anyone can cook this dish.
