A properly processed offal without any problems can become either a personal dish or a component for dishes (salad, snacks). The main thing is to know the secrets and tricks of the culinary cuisine. For example, you should not immediately clear the offal from the film, so as not to damage the texture. And you need to cook the tongue without adding salt (put spices / salt / pepper only at the very end of cooking). Ingredients such as celery (root), carrots with onions and bay leaves will give a special aroma with a touch and aftertaste to pork tongue dishes.   1. This dish of pork tongue is very easy to prepare. Pour the washed offal by cold water, bringing to a boil. Reduce the heat, remove the foam, and after a while add the parsley root, onions with carrots - you can whole. Cook on low heat until cooked (check with a fork, piercing the tongue - it should enter freely, then look at the juice flowing out of the tongue: it should become transparent).
  2. Then we take out the finished tongue from the pan and fill it with ice water, and then remove the skin from it and send it back to the broth swimming: we boil and turn off the fire of the stove.
  3. Soak gelatin in cool water and leave for a while. We discard the gelatin in a colander and combine the resulting liquid with a warm broth from under the tongue. Mix thoroughly and bring to a boil, and then filter.
  4. In the prepared molds, we lay out the offal, cut into thin rings or half rings, pour in the broth with gelatin. Cool and place in the refrigerator for final solidification.

This is a fairly simple language dish, but very tasty. You can serve it on any festive (and everyday) table, as a cold appetizer, as hot as a garnish of vegetables, green peas. For cooking, we need: a kilogram of fresh pork tongue, peppercorns (black and allspice), bay leaf, carrot, onion, parsley or celery root (or both). And start to cook!

  1. We wash the offal in running water (you can even soak a couple of hours). Then we put the tongue into the container and fill it with water so that it covers it. Add bay leaf, peppercorns. We put on the tile and start cooking (as it boils - remove the wand and fasten the fire).
  2. Peel the carrots, onions, my celery and parsley. We cut everything coarsely and add to the pan. Bring to a boil again, and then cook for two hours (under the lid).
  3. We lay the finished offal in a bowl with cool water. Then clean the peel with a knife. Cut the tongue into circles or semicircles. We serve to the table.

This is a salad that has become a tradition for many families. But each mistress has her own recipe. Olivier salad, where instead of the sausage or meat component is used, can also be cooked. For this we need the following ingredients: a pound of already boiled tongue, 4 medium-sized potatoes, a dozen eggs, a jar of green peas (canned), a pound of pickles (preferably barrel, without vinegar). Some still add ingredients such as onions, apples. But today we can do without these frills. And for dressing we use not too fat mayonnaise (how much will it take), salt with pepper.

Cooking a dish

  1. Hard-boiled eggs, cool, peel. Then cut into cubes (both protein and yolk).
  2. We cut the pickles finely.
  3. Cook the potatoes directly in their uniforms, and then peel and cut them into cubes.
  4. Pork tongue cut into strips or cubes.
  5. We mix all the ingredients in a container of suitable size and season with mayonnaise and spices (mainly ground black pepper or a mixture of different types of peppers).

He will be hearty and rich. And any housewife can cook it. To do this, you will need the following ingredients: a pound of tongue, 3 medium potatoes, 2/3 cup buckwheat, carrot, onion, salt / pepper, sour cream - half a glass, greens for garnish.

  1. Boil the tongue (1.5-2 hours) and remove from the broth. Cool and remove the skin from it, cutting into large pieces. The resulting broth is filtered.
  2. Rinse and peel potatoes with carrots. Cut into cubes and circles - respectively.
  3. Enter the vegetables in a pot with broth.
  4. We wash the buckwheat and send it there.
  5. When the cereal is almost ready, add to the mass pieces of pork tongue.
  6. Shred the onion and stew in oil, and then add to the pan.

We will need the following ingredients: 700 grams of pork tongue, onion, sour cream (glass), vegetable oil, a little flour, 250 grams of champignons (you can not add them to the dish), salt with pepper and spices according to your individual preference.

How to cook

  1. First of all, wash my tongue and put it in a pan filled with cold water. Cook over low heat for an hour and a half or two (until the product is soft). Salt in the end.
  2. We take offal from the broth, cool and cut into medium cubes or slices.
  3. At the bottom of the cooking container, pour a little vegetable oil and send the mushrooms there. Fry over low heat. Simultaneously fry until gold and chopped onion finely. Then add the fried onion to the mushroom stewpan, continue cooking for a few more minutes.

  5. In a small amount of broth, we breed a little flour. Combine the mixture with sour cream, then pour into a saucepan with the rest of the ingredients. Gently mix and leave to stew for another 15 minutes. Before serving, sprinkle the dish with fresh herbs and lay out in portions.

Julienne

This is a dish of pork tongue in the oven. Unusual, delicious julienne with a tongue is baked in it. And you need to cook it with onions, with mushrooms, with milk or sour cream sauce. We will need the following ingredients: two boiled pork tongues, 300 grams of mushrooms or oyster mushrooms, onion, 100 grams of butter, salt with peppers, half a cup of flour, a glass of fat milk, 300 grams of hard cheese.

How to cook

  1. Boiled in advance and peeled tongue cut into small cubes or strips.
  2. We cut the mushrooms into cubes, and chop the onion finely. Fry mushrooms with onions in oil (and leave half of it for the sauce). Salt / pepper.
