Beans are a valuable and very popular food crop. Its proteins are easily absorbed in the human body, and in composition they are close to those contained in meat. It is used for cooking and occupies an important place in the cuisines of European and South American countries, as well as in China. Varieties and types of this culture differ in shape and color (from white to black). Fruits are rich in proteins, carbohydrates, amino acids, flavonoids, sterols, organic acids. And they also contain various vitamins (thiamine, ascorbic and pantothenic acids, pyridoxine). There are many ways to cook white beans. It is used in soups, salads, sauces and spreads.
Recipe 1
Before cooking, the fruits of this culture must be soaked. The recipe describes how to cook white beans , and what foods are required? Ingredients:
- 500 g of dried white beans;
- 1 onion (yellow);
- 2 leaves of laurel;
- sea salt;
- black pepper.
Beans are laid out in a single layer and remove impurities or damaged fruits. Rinse well. Soak the beans for 8 hours or all night, for this, fill it with three times the volume of cold water. Sometimes you can use the quick soaking method: close the lid of a pot filled with water with beans, bring to a boil, boil for a minute, remove from heat and leave for an hour. Drain the water and transfer the beans to a large pan. Again, fill it with water, the level of which is 5 cm higher than the beans. Add bay leaf and onion, bring to a boil, remove the scum. Reduce the heat, cover and simmer, stirring slightly. Important detail: how much to cook white beans? Until it becomes soft, about 1 ½ hours. Remove onions and bay leaves, season with salt and pepper.

As in the previous recipe, the fruits are sorted and washed. But here's how to cook white beans - this cooking method is very different. Ingredients:
- 400 ml of chicken stock;
- 500 g of dried white bean fruit;
- 4 glasses of water;
- 2 cups diced ham;
- 1 large onion;
- 2 leaves of laurel;
- 2 carrots, cut into strips;
- ½ cup margarine;
- salt;
- black pepper.
Beans are poured into the broth, water, ham, bay leaf, onions and carrots are added. Cover with a lid. The main question is how much to cook white beans? On low heat it is cooked from 7 to 9 hours. Remove bay leaf and add margarine. Season with salt and pepper.

This Canadian cuisine recipe also answers the question of how to cook white beans.
- 2 tablespoons extra virgin olive oil (without heat treatment and chemicals);
- 2 small onions, cut into cubes;
- celery stalk, cut diagonally;
- 1 carrot, cut into cubes;
- 2 cloves of garlic, chopped with a knife;
- ½ teaspoon of tea salt;
- ¼ teaspoon chopped fresh thyme;
- ¼ teaspoon of tea pepper;
- ¼ a glass of white dry wine or water;
- 1 cup chopped tomato;
- 1 cup chicken stock;
- 1 glass of water;
- 1 tablespoon butter;
- 1 cup white beans;
- 1 onion;
- 1 bay leaf;
- sprigs of fresh thyme.
The beans are sorted, washed and soaked, as described in recipe 1, transferred to a pan, filled with a three-fold volume of water. Add the onion, bay leaf and thyme sprigs, allow to boil. Reduce heat, cover and simmer for 45 minutes or until tender. Remove onions, bay leaves and thyme. Cool for 30 minutes, put in the refrigerator (in an airtight container) for a day. In a skillet, heat olive oil. On medium heat, fry (10 minutes, stirring) onions, celery, carrots, garlic. Season with salt, thyme, pepper. Pour the wine. Transfer to a stewpan and cook for 30 seconds, or until almost all of the liquid has evaporated. Add tomatoes, broth and water, beans and let it boil. Boil over low heat without covering, for about 30 minutes or until the liquid evaporates, and the beans do not become soft. Mix with butter. Cool for 30 minutes, put in the refrigerator (in an airtight container) for a day. Use in salads, served with meat or fish.
