Japanese udon noodles are considered a traditional dish. It is served with various fillers or just cooked with spices. Japanese noodles can be white to gray. The big plus is that it cooks very quickly. In order to plunge into the world of the East, today we will cook noodles with chicken and vegetables. The recipe itself is very simple and economical, so anyone can handle it. When cooking, you need to take into account your taste preferences. If you like spicy foods, add the spices you like best.
Dish components
- chicken breast - 500 g;
- spices to taste;
- soy sauce - 3 tbsp. l .;
- udon (noodles) - 350 g;
- Bulgarian pepper - 2 pcs.;
- dried ginger - a pinch,
- onion - 1 pc.;
- red carrots - 1 pc.;
- chicken broth - 120 ml;
- garlic - 2-3 cloves;
Cooking Chicken Noodles
To start, let's take care of vegetables. We clean the onion and cut into thin half rings. We take carrots and grate it on a Korean carrot grater. Red carrots give sweetness to the dish, as it is sweeter than pale orange carrots.
Now we pour the oil in a deep pan and heat it, put the onion and fry it. Onions should always be put first, since it is the longest prepared from vegetables. When it becomes a little golden color, add the carrots and fry for seven minutes. Do not forget to constantly stir the onions with carrots. If they burn, the dish will have a bitter taste.
We take pepper, clean and wash it, and then cut into thin half rings and add to the pan. Fry for another five minutes, stirring constantly. You can add a little broth so that the vegetables do not burn. Make the smallest fire and take the breast.
Separate the chicken breast from the bone and skin, cut into pieces. They should not be very large, so that later it would be convenient to eat the dish with chopsticks. Mix everything and add spices, including ginger. If you like more spicy food, you can add a couple of slices of chili. Mix everything and add the broth. If it is not, you can replace it with water, but the taste will not be so saturated. Add soy sauce and mix everything again. Cover and simmer for 10-15 minutes.
While our vegetables and chicken are stewed, boil udon. We put the noodles in boiling water, you do not need to break it, and cook for 5-7 minutes. This time will be enough for her to prepare. When the udon is boiled, drain the water and let cool for a few minutes.
Add finely chopped garlic to our vegetables and meat. It is not necessary to pass it through the press, as there should be small pieces. Mix. Then add the noodles, mix everything again and leave to simmer under the lid for seven minutes. Put the finished noodles into bowls. Sprinkle it with green onions for decoration. You can also serve separately soy sauce, which will add a piquant dish. Do not forget to put sticks in order to fully experience the culture of the East.
Homemade noodles with chicken and vegetables
For those who have not found udon noodles or simply do not like it, there is another and tasty recipe. It is more painstaking, as we will cook home-made noodles (with chicken) with our own hands. This is not soup, because when cooking soup, noodles are cooked with all the ingredients, but here the cooking process is separate.
Ingredients
- Carrots - 1 pc.
- A mixture of dry herbs - 2 tbsp. l
- Spices to taste.
- Large egg - 1 pc.
- Onion - 1 pc.
- Wheat flour - 200 g.
- Chicken Breast - 400 g.
- Sunflower oil - 3 tbsp. l
Cooking
First, clean the breast from skin and bones, cook it for 35-40 minutes. When the water boils, add salt and a leaf of parsley.
While our breast is cooked, we will prepare the dough for the chicken noodle recipe. Add well-sifted flour to the bowl, then salt, mix the dry ingredients. We form a small pot and drive a large chicken egg into it, and then vegetable oil, mix everything well. We get the resulting dough from a bowl and begin to knead it on the table. At the same time, do not forget to sprinkle the table with flour so that the dough does not stick. The dough should be elastic. When it stops sticking to your hands, you need to wrap it in cling film. If you donβt have it at hand, a package will do. We remove the dough for half an hour to the side.
We get the chicken fillet from the broth and let it cool. It should be warm, but not hot.
Let's cook the vegetables. We clean the onion and shred the half rings. It must be doused with boiling water so that all the bitterness is gone, since in this recipe it does not need to be fried. Peel and cut the carrots into thin strips. It should not be very shallow, otherwise it will be lost in the broth. Add vegetables to the broth and cook them.
When the chicken has cooled, we cut it into a small straw and put it back into the pan. Add spices and dry herbs. Mix everything and set to simmer over low heat. When the vegetables are ready, turn off the heat and set the pan aside.
Cooking our noodles. We unfold the dough and roll it, the thickness of the layer should not be more than 1 cm, otherwise it may not boil. In order for the dough to roll evenly and to be even, turn it over after each rolling. Do not forget to sprinkle the surface of the table with flour so that the dough does not stick and does not tear. Now you need to cut it. The width of each strip should not be more than 4.5-5 mm.
Cook homemade noodles in salted water for about 7 minutes. As soon as the noodles are cooked, drain the water and cover with a lid.
Put noodles in a deep plate and pour hot broth with meat and vegetables. Sprinkle with greens on top. You can also offer croutons to such noodles.
