Often you want something unusual and certainly meat. Cutlets will not surprise anyone for a long time. But chicken muffin will be appropriate in many cases. It can serve as a great (and convenient!) Snack, it is good at the buffet and very attractive for children as a school breakfast. In addition, it is prepared simply and does not require elaborate ingredients.

First, prepare a simple but insanely delicious chicken muffin. The middle onion crumbles finely, in the same way one small carrot is chopped. Frying is made of them, and it should be well-fried. A small zucchini is peeled and rubbed with a coarse grater, after which the chips are also chopped. Parsley with dill chopped. A pound of ground chicken is mixed with all prepared ingredients, peppered, seasoned with Provencal herbs and salted. Balls are made from the mass and placed neatly on muffin tins. Half an hour in the oven, decorate to the best of imagination - and the snack is waiting for the eater!

From the poultry breast (one third of a kilogram), mincemeat is made by scrolling in a meat grinder together with an onion. An egg is driven into it, the finest chopped paprika, the grated garlic clove, favorite spices and, of course, pepper and salt are poured. The mass is kneaded; if it turns out to be liquid, it can be thickened with breadcrumbs. Two-thirds of the stuffing is distributed in the cells of the muffin mold. In the center of each element, a recess is made in which a piece of cheese like mozzarella is embedded. β€œLids” are made from the remaining mincemeat from above. To make it a nice crisp, each chicken muffin is sprinkled with a mixture of bread crumbs and grated cheese. It is sprayed with olive oil, and the mold is placed in the oven for a third of an hour.

As everyone knows, chicken meat harmoniously harmonizes with champignons. This was used by the cook, who came up with chicken muffins with mushrooms. For them, a third kilo of mushrooms, carrots and onions are peeled. The root crop is rubbed, the rest is crushed. Mushrooms are fried until the water stops, then the onions and carrots are added and frying is done. Chicken fillet with a total mass of 600 grams is grinded in a meat grinder, mixed with vegetables, two tablespoons of oatmeal, a stack of cream, pepper and salt. The mass should stand for about ten minutes for mutual impregnation of the ingredients. Then the stuffing is distributed according to the molds (smeared if they are tin, and moistened with water if made of silicone) and sent for half an hour to a heated oven. After being removed from the oven, the "patties" should cool down a bit, after which they can be removed from the molds. Each chicken muffin is sprinkled with ghee and sprinkled with chopped herbs. If desired, a few minutes before cooking, you can sprinkle chicken muffins with cheese and return to the oven. Some chefs replace cheese with mayonnaise, this is a matter of taste.

Suitable sauce

Whatever chicken muffins you cook, they will be tastier with gravy: nevertheless, the chicken is somewhat dry. Of all the sauces offered by the chefs, we chose two. Moreover, it is not necessary to pour the chicken muffin with gravy, you can just dip it.

For the first, tomato juice is taken; finely chopped onions with garlic, spices (optional; Italian herbs recommended for those undecided ), a couple drops of lemon juice and a little vegetable oil are introduced into it.

For the second, garlic is pressed in ayran (sold in supermarkets), dill is chopped and ground pepper is poured. Other spices are optional, and so it turns fragrant and harmonious.
