Ministerial meat is a dish whose cooking technology was developed back in Soviet times. Balanced and nutritious, it was the best suited for dignitaries and members of the government. Most likely, he was served for lunch to ministers. This is probably where the name came from. Depending on the type of meat used, there are currently several ways to cook it.
Breaded beef
Many experts believe that ministerial meat should be cooked in breading, which, as it were, plays the role of an officialโs costume. This idea has a certain meaning. Usually, beef is used for such a recipe, as the most noble and healthy meat. The technique for preparing such a dish is simple. The following products are usually used as the main ingredients: 0.5 kilograms of beef, 50 grams of flour, 150 grams of mayonnaise, 2 eggs and 60 grams of sunflower oil.
Making ministry meat is easy:
- First, beef tenderloin must be cut into portions. The meat should be slightly beaten, and then sprinkle with salt and pepper a little.
- Then you should prepare a lezon. For this, you need to beat the eggs well, mix them with mayonnaise and salt a little.
- Dipping each piece of meat in the prepared mixture, roll it in flour, and then fry on both sides in boiling oil.
The finished product is served on the table separately or with any side dish.
Ministerial cutlets
As you know, the name always leaves its mark on the dish itself. Even simple cutlets may not look quite normal if they are cooked for dignitaries. Sometimes in cookbooks you can find a recipe where the meat is ministers made from the following components: ยฝ chicken fillet, 60 grams of flour, an egg, 2 cloves of garlic, 2 tablespoons of mayonnaise and any greens.
The process itself resembles the preparation of ordinary chopped cutlets:
- The first step is to process the chicken breast. It is necessary to carefully cut off the skin from it, and then remove all the bones. After this, the meat must be finely chopped with a sharp knife.
- Stir the eggs well with mayonnaise. Add salt, squeezed through a press of garlic, chopped herbs and slightly pepper.
- Add chicken to the prepared mixture.
- Spread the mass on a hot frying pan with a spoon and fry in oil on both sides.
It turns out tender and very juicy cutlets, which must be liked even by the most picky minister.
Meat with garnish
It looks very original recipe, according to which meat is prepared in a ministerial way with potatoes. In this case, juicy chops are baked in a "shell" of vegetables. It turns out that the dish is cooked simultaneously with the side dish. For this recipe, you need a minimum set of products: 1 kilogram of fillet (beef or pork) and the same amount of potatoes, 300 grams of onions, salt, mayonnaise and ground pepper.
First you need to prepare the main ingredients for work:
- The meat should be cut into pieces and beat well with a hammer.
- Chop the onion in half rings, and cut the potatoes into circles.
- Process the inside with vegetable oil. At the very bottom, put part of the potato, sprinkle it with a little pepper and salt.
- Spread the onion on top.
- Put pieces of meat on it so that there are no gaps between them. Sprinkle them with a mixture of salt and pepper.
- Cover with leftover potatoes and coat with mayonnaise.
- Place the dish in the oven for 45 minutes. It must first be warmed up so that the temperature inside is at least 180 degrees.
Such a dish would not be ashamed to serve even a minister for lunch.
Meat under a "fur coat"
There is another way by which you can cook minced meat in the oven. This option is no worse than the previous one. Many believe that it is a variety of well-known meat in French. Historians claim that this is a simplified way to cook a popular European dish. This is partly true, since the same ingredients are used for cooking: pork, hard cheese, onions and mayonnaise.
The technology of these dishes is also somewhat similar:
- The meat must be cut into separate pieces with a thickness of not more than 1 centimeter. They should immediately be salted and lightly pepper.
- Chop onion into thin rings and chop the cheese on a coarse grater.
- Grease a baking sheet with fat or vegetable oil and spread pieces of meat on it.
- Cover it with onions, pour mayonnaise and sprinkle with cheese.
- Bake in the oven for 40 minutes.
Outwardly, such a dish really resembles meat in French. True, it is being prepared not in batches, but in a continuous layer.
Mushroom Meat
By adding different ingredients, you can cook several interesting options for the same dish. For example, mushrooms perfectly complement minced meat with potatoes. The recipe is good because it needs the most common ingredients: 10 potatoes, 300 grams of champignons, 250 grams of mayonnaise, as well as 800 grams of pork, cheese and onions.
The whole process consists of three successive stages:
- First of all, you need to grind and prepare for work all the available products. For this, the meat must be cut into pieces of the same size and beat well. Peeled and washed potatoes should be cut in even circles. It is best to chop onions with rings, and grate cheese. Mushrooms should be cut into thin slices.
- On a baking sheet, treated with oil, put the products in layers: potatoes - meat - onions - mushrooms - cheese - mayonnaise.
- Send all this into the oven and bake until a pleasant golden crust forms on the surface. This will be a signal that the dish is ready.
This option also partially resembles French meat prepared in the Russian manner.
