It is difficult to imagine a New Year's table without sweets baked by mom or grandmother. I think the recipes below for winter cakes and pies will help you please your loved ones with delicious, lush, ruddy and mouth-watering confectionery.
Chocolate cake
Grind egg yolks with sugar, chopped nuts and butter. Then pour in flour and add baking powder or quenched soda. Knead the dough, divide it into 3 parts and bake the cakes. Bake them at a temperature of 180 ° for at least 20 minutes. Each cake and cake on top is greased with cream.
For the test: 220 g of margarine or butter, 3-4 yolks, a glass of sugar, half a spoon of soda, a glass of nuts, 300 g of flour.
For cream: 4 teaspoons of cocoa, juice of one lemon, 4 protein, 130 g of sugar.

For the test, take:
- a glass of sugar;
- 3 cups flour;
- 2 yolks;
- 200 g margarine;
- a glass of sour cream;
- some salt;

- vanillin.
Grind the flour with margarine, add sour cream, ground with sugar, mix until a thick homogeneous mass is obtained. We make 40 legs and 20 hats and bake in the oven. Make a recess in the middle of each hat.
We dilute half the sugar with three tablespoons of water and boil. Glue the halves of the legs and the hat with the resulting syrup. We lay the mushrooms with their legs up and set to dry.
When the mushrooms dry, beat 3 cups of sugar with two proteins until a thick mass is obtained and cover the legs and bottom of the hats with it. Dip the legs in the poppy and set to dry.
Now 2 tablespoons of milk, 4 tablespoons of cocoa, 50 g of butter, 4 tablespoons of sugar are cooked and dip mushroom caps into the resulting mass. Place them around the plate so that the hats are dry.
When the icing dries, lay the mushrooms on a greased winter cake and leave for 12 hours.
Lemon Cake
Rub the yolks, gradually pour the powdered sugar, then flour, grated zest and soda. The resulting mass is carefully mixed with whipped proteins. We put the dough in a greased form. Bake at an average temperature of 25 minutes. Cool and cut into three layers.
Beat the whites by adding powdered sugar, and gradually in the process of whipping add the juice and lemon zest dropwise.
Rub the white oil and mix it with proteins. Lubricate the layers of cakes with this cream. On top and sides, cover the cake with icing (grind the proteins for 20 minutes with icing sugar, add lemon juice).
We put the iced cake for 10 minutes in a slightly warm oven.
This winter cake without mastic can be decorated with marmalade in the form of lemon slices.
- Dough: 6 eggs, 250 g of flour, half a teaspoon of soda, 100 g of powdered sugar, zest of one lemon.
- Cream: 3 protein, one lemon, 240 g butter, a spoonful of icing sugar.
- Glaze: 2 protein, 200 g sugar, juice of one lemon.

Beat butter well. Then, stirring, add the egg yolks, previously ground with sugar and cocoa powder. Then pour in the hot milk, and in the end - liquor (if not, then you can without it). The cream is ready.
Place cookies soaked in cold coffee in three to four layers, each greased with cream. Top and sides apply the remaining cream and sprinkle with chocolate grated on a fine grater.
600 g of cookies, one cup of cold sweet coffee, 250 g of butter, 2 yolks, 3/4 cup of granulated sugar, 3/4 cup of milk, 3 tablespoons of cocoa, one tablespoon of liquor.
Let the cake soak and serve.
Orange cake
We mix the flour with softened butter, make a hole in the dough, pour warm water there, put sugar, a little salt, mix thoroughly and put in a cold place for an hour. Ingredients: 350 g flour, 100 g butter, b tablespoons of water, a spoonful of sugar.
Now we make a 3-4 cm thick cake from the dough, transfer it to a greased form and put it in the oven for 180 minutes at 180 degrees.
For the cream, mix an incomplete glass of sugar and half a pack of butter, add the juice from two oranges, 4 beaten eggs and grated zest. Cook for 20-30 minutes, cool and grease the cake with cream. Pie "Mazurka"
Rub two eggs and a glass of sugar. Put a glass of raisins and crushed walnuts, then soda (a quarter of a teaspoon) and lastly a glass of flour. Mix everything thoroughly. Put the dough on a sheet greased with melted butter and place in the oven. Finished pie still hot cut into pieces.

A few words about food colors. Glazes, creams and other jewelry can be tinted with natural coloring agents. At the same time, keep in mind that an excessively bright color causes an unpleasant feeling.
White paint gives milk, icing sugar, sour cream, cream. Yellow is obtained from lemon peel, saffron. Saffron is also used to make sweet yeast dough, muffins, cookies, cakes, creams.
Squeezing the juice from spinach, get green paint. It is advisable to add vanillin or a little chopped lemon or orange zest. Brown paint gives coffee infusion and burnt - burnt sugar. To get burnt, pour 1 tablespoon of sugar and, stirring, heat on low heat until the sugar turns dark brown and a smoke appears. Gradually add, while continuing to stir, half a glass of hot water and stir until the lumps dissolve. Filter the resulting sticky brown solution.
