- cottage cheese 200 gr.;
- three eggs;
- sour cream 40 gr.;
- two glasses of flour;
- a small spoonful of soda (nepogash.);
- salt.
For filling:
- apples 5 pcs.;
- cinnamon to taste;
- sugar.
We prepare cottage cheese dough for pies: mix sour cream with cottage cheese well. Beat eggs with salt in a separate bowl - add to the curd and sour cream mass.
To make the dough airy and soft, sift the flour with soda and mix with the rest of the ingredients - cover with a towel and leave in the refrigerator for half an hour. It is important when kneading the dough not to knead it for a very long time, because after frying the baking will become dense.
Filling: cut the apples into cubes (as you like), sprinkle them with sugar and cinnamon. So that they do not darken, they can be sprinkled with lemon juice.
From the dough we make small circles, roll out, lay apples and cinnamon on top of each piece - we form them in the form of dumplings. And you can immediately fry in vegetable oil. You need to fry over medium heat so that the apples have time to soften.

Baked Cheese Pies
Products for the test:
- cottage cheese 200-250 gr.;
- flour 3 cups;
- a pack of butter;
- two eggs;
- sugar, salt and soda per teaspoon.
Filling:
- two hundred grams of cottage cheese;
- egg;
- zest of one lemon;
- sugar, vanillin;
- raisins or poppy seeds at will - 100 gr. (you can add fresh and canned berries, nuts, coconut).
Preparation: beat the sugar and butter (softened) with a mixer. Next, add eggs to the oil mass and beat well again until a thick, uniform and lush consistency.
Mash the cottage cheese with a fork and mix in the creamy mass. Then we interfere the sifted flour with soda, salt and mix thoroughly. The dough should be left for thirty minutes in the refrigerator.
While our sandy curd dough for pies is cooling, we will prepare products for the filling during this period of time.
We wash the lemon and rub the zest. Pour dried fruits with boiling water and let stand for several minutes. Beat cottage cheese, egg, vanilla and sugar in a blender until creamy, add lemon zest and dried fruits (it turns out very tasty with berries).
We take out the chilled dough and cut into 15 equal pieces. Roll the pieces into small cakes and spread the curd filling - pinch the edges, sprinkle with flour.
We cover the baking dish with parchment, grease it with vegetable oil and put the pies a little apart from each other. To form a golden crust, coat the buns with a beaten egg - leave to bake for 15 minutes.
