It should be approximately 25% of the volume of mushrooms. Banks are closed with lids and placed in the refrigerator. Such mushrooms are ready in a month. They should not be stored for long, as they can peroxide.

To do this, large, fresh mushrooms are cut into thin plates, sprinkled with salt and pepper. Each slice is dipped in batter and fried in hot vegetable oil until a delicious crust is obtained. The batter is made from 1 egg, a small amount of flour and 100 ml of water.
These mushrooms are great for making soups. For them, you can use shiitake in any form, but you need to soak dry ones before cooking for several hours.
Shiitake are very tasty as a filling for pies and other dough products. So, you can cook wonderful pasties stuffed with these mushrooms. For this dish, you need 250 g of mushrooms (preferably fresh), 0.5 kg of wheat flour, 250 g of hard cheese, 50 g of butter, vegetable oil for roasting pasties. Still need water (a glass) and salt (0.5 teaspoons). The dough is kneading as for ordinary pasties. Mushrooms are crushed, the cheese is grated. Butter is added to the filling. Small pasties are formed from dough and toppings from cheese and mushrooms. They are fried in hot vegetable oil.

This dish requires 0.5 kg of fresh mushrooms, 2 onions, vegetable oil, ground black pepper, salt. You can fry both pre-boiled mushrooms and fresh ones. In any case, the prepared mushrooms are fried in oil until fully cooked, however, while boiled mushrooms are added to the fried onions, and fresh ones are fried a little, then chopped onions are added to them and they are brought to full readiness. Some gourmets add a little ground nutmeg to this dish.
