Mulberry jam

This is a very simple recipe. You will need about a kilogram of large berries that need to be sorted out before, and four hundred grams of white sugar. Mulberry jam will turn out to be more sweet and dense if you do not keep the fruits in water for a long time. After sorting out the mulberry, sprinkle it with sugar and put in a wide copper basin on the fire. Wait until it boils, immediately remove from heat, and after cooling with a blender, give the mixture uniformity. Then put it on the stove again and cook for another twenty minutes, making sure that it does not burn. The resulting mass must be allowed to cool and infuse for six hours. Then the mulberry jam is again boiled, and then poured into jars. If the bones that are in the mulberry berries prevent you from enjoying this jam, you need to remove them with a fine sieve at the cooking stage. Also the mulberry tree can be prepared using a juicer.

Two kilograms of berries need 900 grams of sugar and five medium apples, preferably not very sour. Apples are needed so that the jam has the right consistency. Thanks to the pectin contained in them, this is easily achieved without the addition of extraneous chemical ingredients. Rinse apples and berries, dry with a towel. Then peel the apples and cut into medium cubes. Sprinkle with sugar, after fifteen minutes put on fire. After boiling, the jam should be infused and let the juice go. Boil again the next day. Then pour into jars and sterilize. “If I make mulberry jam, is it possible to flavor it with spices?” - you ask. The answer is, of course, yes! Star anise, cinnamon and dried rosemary - a wonderful aromatic composition in order to give jam interesting notes. Liquorice, fennel and prunes are also suitable.

Pie with mulberries, cottage cheese and jelly filling

First make a lean lean pastry. The butter in it must be replaced with sunflower oil, as well as eggs. Mix flour (two hundred and fifty grams) with four tablespoons of sugar. Add half a glass of vegetable oil and one and a half tablespoons of sour cream, fermented baked milk or yogurt. The dough should be homogeneous and sufficiently elastic. Bake the base, without removing it from the mold, cool, then put the first filling on it - from cottage cheese with sour cream and sugar (separately you can dissolve the gelatin and add to the mixture so that it keeps the form better). Tamp a little with a spoon. Prepare jelly from one pack of finished store powder. Put the mulberry over the curd mass, smooth. Put a slightly frozen jelly on top and smooth it with a hot knife.
